That's GergoPlex! A nice similar keyboard is Ferris Sweep. The non-split ortholinear keyboard in the video is Work Louder Creator board. And the rainbow one is a handwired custom by me. Let me know if you need help with anything else!
Any ortholinear split keyboards with knobs you recommend? My current daily driver is Kinesis advantage and it's hard to find anythings that matches up in ergonomics, but I am curious for an option with knobs.
Wow that's a cool keyboard! In terms of ergonomics it's pretty much at the top of the pyramid so there are not many keyboards that are gonna match up. A popular option with encoders that I would recommend is Kyria. I mean, just look at this thing: www.reddit.com/r/ErgoMechKeyboards/comments/s5elmg/custom_cased_kyria/ I've never seen a more beautiful thing! Depending on your overall desk setup and specifically the hands placement, a flat keyboard with low profile switches like Kyria could be a more ergonomic option compared to Kinesis that requires you to raise the hands and rest on your wrists (but if you don't do that and rest on the chair armrests instead, it shouldn't be an issue). Also in terms of sculpted keyboards (concave like kinesis, not flat), it's quite popular to 3D print them and hand-wire, so there are a lot of options, but I haven't explored them much yet.
