The knife skills are important, and proper uses of various types of knives can save a lot of stress and injury in the kitchen.BTW, great spread in the deli bar.

any cook who hasn't failed at cooking something or burned while cooking isn't working or trying very hard......Mr. T is a professionally trained chef...ofc he has....they will all the time test new recipes they concoct to see if they work or not first testing them themselves and then on coworkers before serving them to the public

I wish there had been a deli like this where I worked. My trade association in Washington DC had a deli on the ground floor of their building. Very similar to this but they also had a buffet for breakfast and lunch. It closed when the owners wanted to retire and their kids didn't want to work as hard as needed to run the business.
One critique, I did not like how at 1:10 you brushed up the fallen bits back onto the sub. I was thinking that could come with dust if it wasnt perfectly clean
i love a fellow cook and a happy person doing it ,my chefs are lazy and useless but i guess ur country is way different then USA(boo). you care and it shows and that makes u and everyone work better with ur great attitude and diligence
it's interesting how he varies what he does with the stuff that falls out of the sandwiches. I wonder if the particular customer has anything to do with that. Sometimes it goes back in the sandwich. Sometimes it goes on top of the sandwich. And other times it goes in the garbage.
