Technically, with note locks, trip wire hooks, strings and blocks to get the right sound(s), you can make a string instrument in Minecraft. It won’t work the same way as a base or guitar, though.
The redstone is pretty simple here if you think about it. Just long lines of redstone, a few pistons, a redstone clock for looping and buttons and pressure plates for input.
in a situation like this it would be useful to use code "fill, coordinate, block" to reduce the hassle with Redstone, air can also be inserted into that code as a block

I'd guess he has a decent understanding of real life circuits from working with amps/loopers/other music electronics. All the redstone components translate to real life components. That or he just looked it up.
