You're probably supposed to refrigerate them open-air, not in a sealed container. Like on a cookie sheet. That will dehydrate or "dry out" the bacon so it'd be more crispy.
I would just assume, that after you refrigerated them overnight, you're supposed to reheat them in the oven and they will get crispy again. But I doubt that they will get even crispier than before. Never tried it though. It looks dellicious. I will try to make it myself.

You are so supportive of those of us who are trying to live a more sustainable and or plant based life style but not ready or able to commit fully yet. That's us for sure. We are trying but it can be hard! We live in a rural area where it's hard to find even some common items at the store, there's hardly any recycling services, and then there is the initial financial investment into sustainable products which can be limiting. I think the storage would be uncovered and exposed to the drying environment of the fridge, it would remove moisture over time and allow for more crispy texture.

Chef Guy Vankin who was in season 10 of Hell’s Kitchen, went on to open a vegan sushi place (Beyond Sushi) in NY after his appearance on the show. It’s now become a small chain with 6-7 locations (don’t quote me on that) and is pretty popular. Maybe he could teach Gordon a thing or two about vegan food.
Yeah, I'd probably try the sandwich....whole piece of rice paper, tofu, spread around the edges, tofu crumbles in the middle, topped with another piece of rice paper. Haha a huge pepper grinder would be epic! But for real tho they make small pepper grinders that I love for cooking without taking up a ton of counter space. Not too expensive either.

O gosh, I have all the ingredients! I guess I know what I'll be making soon. 😌 Update: it was unbelievably delicious, but personally I liked the "double ones" which were soaked in marinate and nothing else (that weren't soften by dunking them in water). They were chewier, but also saltier, so advice to be more careful with soy sauce! : v
I have a feeling the 'bacon' is supposed to be left out in the fridge to sort of dry out; a zip lock bag probably just traps the moisture and it goes back into the bacon making it soft.

I love making bacon bits from tofu. Cut the tofu in super small pieces, don’t even have to press it. Fry them in a pan for like 5 minutes till they’re crispy and just add soy sauce. It’s amazing!!! And super easy ☺️
I was my hands after touching my animals, before cooking but I think most people who have pets understand that its virtually impossible not to get a stray hair in their food at some point. Just part of having animals lol
Hey Merle, great to see that the bacon is worth it, I will attempt it soon too! Nice that you showed one can use a reusable towel to press the tofu! A few more tips are to use a reusable silicon mat instead of baking paper and to just store (or marinate) the 'bacon' (or anything else) in containers instead of in plastic ziplock bags, even empty glass jars work well. Maybe yours were actually reusable and it's up to you what you do with this, but did wanted to share in case you hadn't thought of it yet. I recommend a mortar and pestle!!! I assure you you won’t regret it and you can use it for almost any spice you can think of including pepper ;) also! guacamole :) otherwise Trader Joe’s has a shelf friendly pepper grinder that has grinderless refills for less plastic waste :)))
You can place a kitchen towel over the top when your store them or just reheat the already cooked bacon at a lower temperature until they dry out. And air fryer would work too. Just low and short time. I do this with my rice bacon even before Ramsey came along.

I would think that you’d want to refrigerate it the opposite way you did? The bag and paper towels are supposed to help retain moisture, but you’re basically trying to get rid of it to make them crispier
I wouldn't have sealed them - that would have trapped in the condensation which would have made them soggy. My best guess: lay them out flat on towels on a cookie sheet overnight in the fridge, and then they *should* be okay to seal up.

I wonder if you could do full sheets (like the full circle), do a half bake, then cool them. then cut them into strips for a final bake or even frying pan? I love the concept of adding the tofu to give more texture, that is such a great idea.
I mean, real cooked bacon isn't exactly super palatable cold out of the fridge, either. I would assume you're meant to pan fry this before serving to heat / crisp it up again.
