I've made the mushroom & kale pasta dish, but I substituted the hazelnuts for cooked bacon instead, and I've made it with spicy Italian sausage with bell peppers instead of mushrooms. With the tomatoe soup, I've never been a fan until I tried a roasted veggies & tomatoes soup. The flavor profile is better!
I chop the mushrooms really small. If you cook them too long they become chewy. They’re best cooked at a medium high temp sautéed for about 5 minutes. They will continue to cook in whatever you’re making them in also.

I’d replace the mushroom with quality steak (so it’s not tough). They always say mushrooms can be used in place of beef to bring meatiness, so why not replace mushrooms with beef and maybe a little beef concentrate like Demi glaze and I would leave out those hazelnut all together. 😆 I replace anchovies with capers for a briney taste. Try Ina’s tomato soup. It has carrots in it for sweetness, basil, etc. Has a small amount of cream in it too. I make cheesy pizza sticks to dip into the soup. On a cold day, my son will eat this for lunch and dinner. I will check recipe to see which soup and let you know. If you have any leftover you can freeze it or use it as a sauce to put on meatloaf after you brown it. Let finish cooking with sauce on it. You will not need that much of it...about 1 cup or more depending how large your meatloaf is. My mother always used stewed tomatoes to put on her meatloaf. We never had a sweet sauce on the top of it. We had rice with the tomato gravy and meatloaf. My mother was from Crowley, LA. Like a gumbo, everyone has their way of cooking...no two are the same.

Back in 2004, I met Rachael at a cooking expo here in Cleveland. She actually called me up to the stage while she was doing a demonstration! She was making a Thanksgiving meal, and I helped her with her gourmet version of stuffing. I was so thrilled! It is good seeing someone put her meals to the time and difficulty test. After all, on the show, all of her ingredients were measured out and arranged for her. She did try to keep in as many steps as possible to make it more real, though. I went to culinary school, and we always had to try everything. (Except if allergic), and we made duxelles. Basically fancy mushroom pate sort of thing. Blecch. I gagged. Still try every few years to enjoy them. I fail each time.
I loathe mushrooms and I hate tomato soup too! I've tried so many of Rachel's recipes and she just isn't a hit in our house. It's rare if we make one of hers that we actually like.

In college, I would record episodes of 30 Minute Meals on VHS so I didn’t miss an episode. She taught me how to cook. I learned all my basic skills from her.
A tradition in my family for 85+ years is to have tomato soup and grilled cheese on Christmas Eve as it is a quick meal to have before church. I put basil and cream in my tomato soup. I’m definitely going to try these grilled cheese. Merry Christmas🎄🎅
While I enjoy watching Rachel Ray because of her personality I’ve found that approximately 80% of her recipes that I’ve made were not very good. Our family enjoys many different types of dishes but we all would always take the first bite of her recipes and be less than enthused. I also would always have a problem finding all of the ingredients; we don’t live in a major city but we also don’t live in the middle of the woods either but each recipe always seemed to have at least one ingredient that my local stores didn’t stock. I just gave up.

I very much miss Rachel Ray’s 30 minute meals. I was one of my favorite shows back in the day. Thank you for bringing it back!!! And now I’m super curious about anchovies. I don’t eat seafood in general, not for any reason other than I don’t like the taste of seafood, but if it melts away… I might have to pick up a couple cans! 💙💙💙
Interesting fact, Worcestershire sauce is actually made with fermented anchovies! Definitely go check out how it's made, it's a very lengthy process and makes you appreciate the sauce that much more :D
One problem with your review of a couple of these is that the ingredients you are leaving out might add some good flavor. Like the brandy and vermouth are going to have a flavor that is important to the dish. That being said, I loved this video and would like you to do more! 🥰
You should try making gluten and dairy free meals as a challenge!! I love your videos but I’m not able to eat gluten/ dairy and would love to see you try and challenge making some dishes on a budget! 🥰
At last count I have 7 physical copies of Rachel Ray's cookbooks (and a few digital copies here and there). I used to watch her show all the time and some of her recipes are my "go-tos" for the particular dish! It's a shame you don't like 'shrooms because she has more tasty recipes that feature Them. Lol ... I love tomato soup ... I also love zuppa toscana and most any other soup for context. Oh, and I also love mushrooms. I did learn to cook from RR ❤️
Mushrooms are DEFINITELY not my favorite either. Hint on anchovies: you can buy it in a tube (kind of like tomato paste.) It adds the salty-ness without the trauma of actually seeing the furry little fellers. I use it in anything that calls for the 'chovy.

That ending with "Oh Christmas Tree" --- We had a Relief Society thing where we sang it. Somehow the song played and the words typed didn't quite line up the same. Yet people tried to sing it still. At the end of it one of the 11 year olds said out loud "I'm confused!" I still laugh so hard that it's hard to explain out loud to people. I just my husband laughing and he didn't know what I was talking about. I'm not sure I'll ever hear that song without remembering that night.
I think you would love her sloppy joes! I’ve been making them for 20 years ! It is sweet and spicy. I have other favorites but thats my number 1. Her curry in a hurry is phenomenal too
Anchovies are good if you like salty fish. Just gotta watch out for the bones. I eat them out of the can sometimes. I just pick off the meat and eat it. The oil and seasoning are yummy.

Anchovies are in Caesar Salad Dressing. Vermouth should be in the liquor section, it's a mixer. Um...... I thought I could answer 3 of your questions, but I can't remember the third!

I'm a 63 year old woman. I live with my daughter! I can't wait to get my own apartment!!! If it has storage, gonna stock up with non-perishable stuff, and what ever I can afford. I don't know when that will happen, I'll deal with it then
I absolutely despise mushrooms with every fiber of my being. I wish I liked them but I just can't get past the texture. That being said, your dinner looked good and I'm sure that people who actually like mushrooms and nuts(?? why??) would like it.

I also watched Rachel years ago and have used a garbage bowl ever since and I even purchased a large frying pan with the orange handle from her and still in excellent shape years later! Now about the tomato soup.....only for recipes that call for it never to eat, totally not a fan! I do love mushrooms, especially garlic mushrooms on top of steak, yum! I know I'm late, but if you eat Ceaser salad with Cesar dressing, then you eat anchovies 🤣🤣 and if you're not comfortable with cooking anchovies, you can buy anchovie paste like the garlic paste in the tube.
I might be the exception here...I really am not a fan of Rachel Ray.. I just find her dishes boring, and all similar... plus her personality grates on me.. (For those that like her, great! Im never saying my opinion is correct..)
This opinion probably won’t be popular but though I enjoy watching Rachel Ray I don’t think any of her recipes sound good. Oh, I love cooked mushrooms not raw one but several other people in my family don’t like them.
The Rachael Ray recipes always look delicious but the ingredients list is long. But also, anchovies are good IN stuff, I don’t eat them out of the can! Also, why are you serving pasta in ice cream bowls? 😂
I think you are amazing. Sadly no-one is perfect. How can you not like mushrooms? :) I agree with you, however, about the tomato soup. Not a fan. Also not a fan of aniseed, so haven't ever tried fennel. Don't think I'll be trying the soup at all. Bonus: When grating cheese, put the piece of cheese in the palm of your hand and grate that way. It keeps the fingertips at a safer distance, and lets you grate pretty much all of the cheese.

On the mushrooms you said you didn't like the texture. Check into cans of chopped mushrooms. They are minced and will look like little back dots and won't have the texture problem. Not the sliced, the actual chopped.
Tomato soup does need layers of flavour. It's no use without a heap of chopped fresh basil, or pesto or cream, (and adding cream cheese with garlic and herbs is the bomb). That one? Much as I love Rachel Ray? Meh......
I love mushrooms all kinds. Not so crazy about tomato soup. I love mushroom soup n potato soup n chili n vegetable soup. Love you and your family trying new things for us to watch. Coming from cold Indiana.

I used to watch Rachel Ray quite a bit, but not in several years. If you've had ceasar salad, you've had anchovies in paste form (not a ceasar dressing without it). I would likely make that pasta dish with the shrimp. I don't do mushrooms at all, nor tomato soup. Not big on cheese unless it's a really good grilled cheese sandwich, so I'd likely make that with some other soup. I'm with your daughter on the zuppa tuscana soup. Best thing ever.
The garbage bowl is wisdom. I'm glad you are trying new things. I like all these "new to you" things. I don't care for tomato soup either. It is my last choice for soup.
Mushrooms are definitely a texture thing for me too. I'm only just putting them into my meals!!! But they still have to be button mushrooms and pink! But better than none!!?? and tomato soup for me is awesome, but my fav is home cooked bacon hock vege soup. I pretty much live on the stuff in winter!!!
I am 100 percent Italian, and my husband always says you are not Italian, because I can't stand Mushrooms it's definitely the texture. Funny I will only eat stuffed or fried mushrooms, just not mushrooms on pizza, pasta, or any dish that is not stuffed. lo
For the record, I feel that the vermouth would have made the Aglio e Olio with Lemon & Pecorino Breadcrumbs even better. Anchovies add a nutty flavor to dishes when they are cooked in, I do not like them on pizza here - the ones in Europe do taste less fishy on pizza. Loved the video!
I don’t mind tomato soup but needs extra flavor like basil, etc. not a fan of plain (probably too much Campbell tomato as a kid which I now find disgusting)
