Make the best bone broth and beef stock with a few simple ingredients. The ingredients and cooking options are listed below.
The best way to buy beef bones is to ask your local butcher for them ahead of time. Make sure to ask for marrow bones because the marrow has lots of collagen and gelatin. Use the leftover meat from making the stock to cook other recipes, which will save money and reduce food waste. This beef stock can be used for more than just cooking soups: use the stock and beef fat to cook things like beef Stroganoff or burgers for dinner.

BEEF STOCK INGREDIENTS:
-5lbs of beef bones per 1lb of mirepoix
-The 1lb mirepoix consists of 1/2lb onion, 1/4lb carrots, and 1/4lb celery
-Garlic is optional, but I prefer 3 to 4 cloves
-Bay leaf is the one essential aromatic to add if nothing else
-Thyme, tarragon, and marjoram are optional for extra aromatics
-Tomato paste is optional. I prefer not to add it since tomato can be added later to specific dishes.
-I prefer to not add salt or pepper when preparing stocks in bulk, and instead season with salt and pepper when finishing dishes made with the beef stock.

Man I have yet to get good broth out of my instapot. It doesn't seem to do a good job extracting anything from a chicken carcass even after a couple of hours....I wonder if it's just not able to get a high enough pressure and more time is needed

I use the manual pressure setting on high and a cook time of 120 minutes. If I’m lucky enough to have duck bones or a duck carcass on hand from a roast duck, I’ll throw that in too.
