Constructive Criticism: Every still frame from your sequence looks absolutely stunning, outstanding work! However I think the camera-shake, especially when the ships whizz by the camera looks very stuttery and feels not at all dynamic, unless this was planned to imitate a stop-motion-sequence like you mentioned in the very beginning, I would smooth out the animation graphs for the camera more and lengthen the duration of ever single shake for a next time. Secondly I would smooth out the curves guiding the flying ships more. You can clearly make out "corners" in the curve when a entire Tie-fighter turns for like 20 degrees with almost no forward movement. Other than that, the entire thing was brilliant and the yt-video was well made and clearly had a "touch of love" with all those little details like the mock-up of the Lucasfilms logo and crosscutting to the original. Keep it up, it is always a joy watching your stuff!
you can either use a displacement modifier and use a noise texture, or you can use a noise texture for the displacement in the material. just make sure the material is set to have bump and displacement
