You're right about the reason Eisen hits Stark. In the manga they show us Stark and Eisen had an argument about Stark didn't want to fight the monster that Eisen told him to fight. Stark kinda raise his hand a bit (without intention to hit his master ofcourse) and Eisen hits him on reflex because he thought Stark threatening his life. Eisen just hits him because his survival instinct said so. Amazing reaction!

15:45 my guess is Stark snuck up on him, tried a headlock or some other horseplay (and not realizing his strength) which spooked Eisen into an instant uppercut.
Frieren praises are the best kind of praises. Stark getting some now is so cute. Add another kid to the roster. This is a rare show that does flashbacks correctly. And it's funny that it came out the same time Apothecary Diaries did, which also does the same.
The explanation on why Eisen hit Stark is mistranslated. I speak Japanese so I can tell you the accurate one. On 1:55 The correct translation is, I got this scar when I got into a fight (verbal) with my master because I refused to go and fight monsters. So this suggest that when they were arguing, Stark became angry and this intimidated Eisen, so out of reflex, he hit him.
