I’m nanjingese, nanjing is where the government of Taiwan was, before Taipei. interesting thing is there are many types of food can be only found in taiwan and nanjing such as fried dumplings. My grandmother’s old brother lives in taiwan，he moved there before 1949 and couldn't contact us until many years later. Parents still own a holiday house there that near the sun yat-sen‘s memorial，the guy who found republic of china taiwan and the same guy that all of presidents of taiwan swear the oath to at their inauguration.

It’s not either Mandarin or Cantonese, there are actually many more spoken languages than those two in China and among Chinese diaspora. Mandarin has the most first language speakers, followed by Min, then Wu, then Yue (which includes Cantonese), then others.

Chinese is a language and the ONLY language. Mandarin and Cantonese are the two commonly spoken dialects of the Chinese language. There are many other dialects like Shanghainese, Fujiannese and so on. It's kinda like English being a language and British and American are the two main accents. But there are Nigerian speaking English, Creole English and Scottish speaking English. They all sound differently but it's all English.
