Today I'm in Chiang Khong in Chiang Rai, a sleepy little town in Thailand's north on the border of Laos. As you all know, I like to get off the beaten track in Bangkok and I like to do exactly the same when I'm travelling Thailand. Chiang Khong is about as close as you can get to "unseen Thailand', there really aren't many western visitors here.
Chiang Khong is famous for river fish and khao soi nam naa, a type of noodle soup only found in this town. It's almost identical to Laos Khao Soi, a soup I fell in love with in Luang Prabang. The khao soi in Chiang Khong bears no resemblance to the khao soi that you'd be familiar with from Chiang Mai, this is a whole different beast!
We were told that the khao soi nam na is the original khao soi and originated in the Yunnan province of Southern China before coming to Chiang Khong, Northern Laos and the Shan State.

Chiang Khong is absolutely beautiful, I'd say it's one of my favourite Thai towns. I would highly recommend The Day Waterfront Hotel to stay in, with great service and a lovely place (I get no commission).

We stayed two weeks in Chiang Khong in 2017 at the end of a long bike ride through Vietnam, Cambodia, and SE Thailand. How did we not have any of those three noodle soups? It looks a lot like the Shan noodle soups we ate in Shan State in Myanmar. Delicious. We adore Chiang Khong and staying that long meant we went to the different evening markets, coffee places, Bamboo Restaurant (where we've known the owners for 20 years, they make the best bread we've ever eaten anywhere), and walked along the river every day. Thanks for giving us a glimpse of CK that we miss so much.

Definitely a Shan dish via Yunnan. My friends from Shan cook it for me but with wheat noodles. Spending a bit longer in a place is so much better, you really get a feel for the place and the people. You’ll just have to go back and try the noodles!

All 3 looked good . . . Now I'm incredibly hungry and have to go in search of something to satisfy my Thai food craving!! When you showed the initial view from the guest house I did think "hang on, that's where Ken stayed" :) I've also set my (Shan) Thai family the task of finding places around Mae Hong Son which serve something similar. However, Chiang Khong is firmly ion the list of places to visit on our next road trip :)

Yes Ken did stay here I found out later! This dish is definitely Shan via Yunnan I think, my friends cook it for me but with wheat noodles. If your family come up with any recommendations, please pass them on 🙏🙏🙏😀😀😀😀

Hi Gary, recently found your channel and this one made me finally sub. Thanks for giving Laos Kasoy more screen time. First generation American here with parents from Laos so all your food videos are really pushing me to hurry and visit their homeland. Also the kalaeng fen from the first shop is a dish that originated from China called liangfen which uses a chili oil paste. Here in the states, we make our kaleng fen juice with tamarind so the ending flavor result is sour, spicy, and salty. It's interesting to see how this dish changed in each region. Also subbed because you said you liked the funky fermented bean chili paste! 😁

11:02 She and He said "ข้าวซอย 'สิบสองปันนา' ('Xishuangbanna') noodle style". so that's mean it's originally from Xishuangbanna of China. Xishuangbanna city is located at the south of China near to the boarder of Laos and Myanmar. Xishuangbanna people are Tai(Thai), we share some culture and language in some part of Laos, Myanmar, Northern of Vietnam and Thailand. That may explain why there is a fermented bean chili paste Chinese style. So, if you have a chance to visit Xishuangbanna of China, I want to see you chasing for the original noodle of this kind too.

Really good watch Gary and friends 👍much appreciated. Bowl 2 looked amazing but it's all about the taste and we 100 per cent trust your judgement. We stayed around there on our way to Laos in 2019 intending to go on a romantic boat journey. Couldn't get a boat ticket, ended up going instead on a bone shaking local bus. All good fun and great local food on the way 😋 Love your videos.

Thank you Gary , I just love noodles like you and love to try different assorted kinds ..and this is absolutely enjoyable noodles 🍜 clip , looking good and yum 🤤 because as you said only this town that you can get these authentic noodles. The best top of that, the hotel prices and lovely peaceful scenery of river viewing. I think it’s worth flying there just enjoying the peacefulnesses and museum as well. Yeah worth every penny.👍👏👍

Flying all the way up there then driving just for 3 bowls of noodles! You mad man! I love this! Have to get up there some day; my wife wants to do the slow boat to Laung Phrabang so, we'll definitely stay an extra day for these and a look about. I also just passed through on my way to the boats my 1st time there. The ORG Khao Soi!!

These noodle are the best. I believe they are inspire by southern china cuisine in which alot of people there evacuate to the north of thailand. It don't taste as great without some mixing but once you mixed it with some chilli or fish sauce/vinegar then it a 10/10.

Oooh they look delicious. I've been to both Chiang Rai and Luang Prabang and I remember their soups and broths are not very spicy, but they're heavier on herbs, and sometimes with a hint of mint.

noodle soup is always tasty,I like all kinds.but my favorite one is Guay Tiew Nuea Nam Sai.I think it's cool of you flying 1800km for noodle soup..I personally prefer poached egg in my noodle soup.yes Gary in every noodle soup should be fried garlic.

Yes mate, it looks delicious Laos style Kaw Soi, my Isan wife tells me she doesn't know it 😉 And about the pronounciation, Kaw Lam Poun, so Lam with Sara Am mate 😉 ำ . The second place, ot looks almost the same but a little different Gary 😋 Thanks foe sharing, maybe i will take my Thai family up there this year, was planning to go the Chiang Mai, Chiang Rai and golden triangle, nearby Chiang Khong i guess. And yes Ken was there, i remember his vlogs from the place, the Thai people helped him out in this small town and he even visited the local street market. Mate, this look amazing, I've had pig blood noodles in Nang Rong for ฿30 and they were amazing as well. I think it was worth the trip as it looks so beautiful and peaceful there. My self and my friend Amanda are looking to go to back to Thailand later this year 😋😋😋🤗🇹🇭🙏🏻🙏🏻🙏🏻

The bean paste if Chinese indluenced is 'tau cheo', mostly used as an alternative to salt. The owners of Day Waterfront, 500b in 2014, the man at least is from Hainan Island in China but totally Thai by now and yes he recommended the restaurant just outside the hotel. Seafood was good too. My 90 year old mum loved it! Glad you found it too. I'd like to hunt down khao soi # 3 if ever I get to this town again.

Tau Cheo is the best! Ah that’s interesting, I didn’t know he was from Hainan! I’m glad mum approved 😀 number 3 is definitely the one to find. Plus P’Kai (owner of the hotel) told me they are renovating the old town soon

in a minute 8:07 called "Khau raem feun" or "Khau raem kheun" (ข้าวแรมฟืน หรือ ข้าวแรมคืน) means in English that "Firewood rice" or "Overnight rice" Khao Ramfuen is a traditional food that has been influenced by the Tai Yai, Thai Lue, Yunnan Chinese, and other ethnic groups who traveled from the same settlement in southern China. There are different characteristics according to the cooking method. But they have a common point: they are made from rice, peas, or peanuts, prepared by soaking in water until softened. Then grind until fine. Then mixed with water to have a moderate concentration. Rice must be mixed with lime water or calcium chloride to aid in solidification. Then bring to a boil until cooked and have the right consistency. and leave it overnight. Hence the origin of the name "Khao Ramfuen" or "Khao Ramkhun". ข้าวแรมฟืน เป็นอาหารพื้นเมืองที่ได้รับอิทธิพลมาจากชาวไทยใหญ่ ไทยลื้อ จีนยูนนาน รวมถึงชาติพันธุ์อื่นๆที่เดินทางมาจากถิ่นฐานเดียวกันคือทางตอนใต้ของประเทศจีน. มีลักษณะแตกต่างกันไปตามวิธีปรุง. แต่มีจุดร่วมที่เหมือนกันคือทำมาจากข้าว ถั่วลันเตา หรือถั่วลิสง เตรียมโดยนำมาแช่น้ำจนอ่อนตัว. จากนั้นนำมาบดจนละเอียด. แล้วนำมาผสมกับน้ำให้มีความเข้มข้นพอควร. ข้าวต้องมีการผสมกับน้ำปูนใส หรือ แคลเซียมคลอไรด์เพื่อช่วยในการแข็งตัว. แล้วนำมาต้มจนสุกและมีความข้นหนืดพอเหมาะ. แล้วตั้งทิ้งไว้ข้ามคืน จึงเป็นที่มาของชื่อ ข้าวแรมฟืน หรือ ข้าวแรมคืน

Ramfuen rice in Chinese is called Liang Fen. It is a different kind of Chinese noodle dish. but the name looks the same but distorted from Chinese maybe the same name

Went to khao soi panang and ran pa Laos. Both were excellent. Tried going to Jaem or jam house 3 times over three days, But they were never serving food. Going to try Khao Soi Sipseongbbanna Restaurant tomorrow before I leave chiang khong

@theroamingcook sipseongbbanna was our favorite. I'm not usually a fan of pork balls, but hers were great. The hard boiled eggs were perfect, and not overdone like I feel most are. The parboiled veggies added a new wonderful dimension. We also loved the hand cut noodles that were fatter and had more tooth than the others. Finally, the fermented bean paste was the best of the three. Definitely more heat than the others, but fine by us. My only disappointment is that we are leaving chiang khong today, and won't be able to eat here again. Hands down this was the best khao soi nam naa I tried. It is definitely worth the trip. Once again thank you Gary. I can't believe I found your video during my first internet search after hearing about this dish at my hotel. I only recently became a subscriber of yours after finding you thru Adam from OTR food and history before leaving the states for this trip. Can't thank you enough. Cheers!

Hi Gary, the last time I was travelling Thailand I could eat anything which was great. I now have Celiac disease which means I can't eat gluten and majority of Thai food is cooked with soy, fish sauce, deep fat fried and cross contamination etc I am visiting in April as I want my partner to be able to explore the country's beauty. Fish sauce is gluten free so there are a lot of dishes you can have. Pad Thai is gluten free, loads of Isan dishes like somtam, larb as well as spicy yum salads are gluten free. You can eat all Thai curries pretty much as none have soy in if they are made correctly. Avoid khao soi as it does have dark soy sauce in it.

Hi Gary, sorry I missed the live chat. I guess I was in deep sleep to not have heard the 🔔. Anyway, I am up now and watching, and ready to give you a Thai lesson for the day. 😀. In Thai, a bowl 🥣 is called TOO-AY or TUAY, and a plate is called JAAN, noodles are often served in a 🥣, so 3 TOO-AY (no plurality needed in Thai language), is the correct way to say it, ok? 😀. The original Kao Soi is 👍😋🙏. Ooh, one more thing, a shop or store is called RAAN (ร้านค้า) , where you must roll your tongue, whereas LAAN (ล้าน) is meaning million. 😁. Anyway, the shop owner understood you, since some Thais are having "lazy tongues" these days, even without rolling your tongue, so it's ok, but it will not be correct in a written form, as in, one would not get an "A" in Thai language class. 👍. Watching you being schooled by the noodles ladies had me LOL. Thanks for not taking yourself too seriously. Not having a Title/Diploma as a legit chef doesn't make you less of being an expert. You know your food & you prove yourself every day. There is nothing to be ashamed of. 🤩 Roam on!

They are pretty much lao people there and speak lao locally, many are Lue people, if you go to huey sai and drive towards the casino there is a famous shop along the road, a must stop. But yeah, if you at any locals home you would think your in laos.

@@theroamingcook The best authentic Tai Yai restaurants are around PhaDeaek subdistrict. Other than Khao Soi Noi, there's also Khao Yong Huai (rice flour based dish) and Khao Fuen (a bean jelly eaten with a spicy dip to can mix up yourself) to try. Oh.. and the noodle dish.. Kha nom sen nam jua. Ask me nearer the time if you need a google map link.

Ka liang phun ...my people makes them...can't eat too much...stinky farts. I stopped eating it when mom makes it because I eat too much and I don't want to deal with the consequences 🤣 that kao soi looks good. That's the style i usually make at home .keep the base in the freezer for years..when I make it. Had to ask mom for more of the fermented beans..just ran out so can't make more base at moment.

Yes, Thai language is TONE-L, , for example, the word KAO, could means rice, enter, news, knees, and white😁. Flexing the tongue is the correct way to do it, but the easiest way to tell what the word means is to understand the subject of the conversation. 🙏

Because this is a century old dish from Xishuangbanna and the other was made in (as far as I can tell) in around the 1940’s in Chiang Mai. I’m not a native speaker but as I understand it, Khao soi means cut the rice so it must have been made with rice noodles originally to get that name I’d imagine. I didn’t get any of this information from RU-vid though sorry. I’m happy to be corrected 🙏
