I wish I had more time out there, but the Holy Smokes Festival was something I couldn’t turn down. Meaning I was in Texas for less time than I’d like. I’ll be back for sure!

I'm only 6 minutes in, but definitely earned yourself a new subscriber. I really appreciate that you didn't spend all your time recording, I've seen other BBQ channels where they go "work" at famous BBQ restaurants and it rubs me the wrong way when they focus on themselves instead of learning/working. I look forward to going through your catalog of videos and seeing more :)

I just spent a bit of time in DFW and hung out at Goldee’s and Zavala’s. One of the coolest experiences I’ve had for sure. I can’t wait to go back. Loved the video!

I truly think this was the year they had the event more towards North Charleston, I was wanting to go and and take my son but the event tickets were crazy expensive... Next time you are in SC, make a trip to Myrtle Beach and eat some great seafood... Thanks for sharing..

Cool vid, the format worked. We did the American Royal quite a few years ago and got to meet quite a few people/names and hang with them. Awesome scene and great way to improve your cooking. Tho comp cooking isn't the same as good I would feed my friends and family as its over the top

Hi I’m thinking of starting a small bbq business as well and was wondering how long can the food in the warmer stay in there before it starts going dry? Do you have problems with taking the food out of the warmer every time and the food starting to dry out?

Love that you got to try Hurtado's BBQ. I used to live across the railroad tracks at the flat complex before moving to Birmingham, UK. Are you still selling BBQ for collection? Every time I go onto the site I see that it is saying "sold out".
You didn't check out Rodney Scott's place in Charleston? direct heat cooking so its different but still really good. Great collards and ribs. I think my best overall BBQ experience in Austin was actually La BBQ. Yes, the brisket at Franklins is right up there with the tops in the world but everything was great at La BBQ imo. Veracruz is also fantastic. John Lewis used to have a taco truck where that mural/ painting was but I guess he opened a full blown restaurant for it now, but he had some incredible breakfast tacos too.
I sure did! Didn’t catch any great footage, but I went there and grabbed some ribs, whole hog, collards, potato salad and Mac and cheese. Was delicious!

Plus, taking photos is MUCH less intrusive to the experience than trying to make video footage, so you’d probably capture more of what you’re doing anyway. Video only when you’re alone or if something feels appropriate to film 👍.
Dave I think the footage is just fine. Anyone who has had an opportunity like that, should take full advantage by paying attention and not filming. Now, the Mich ultra is a different story.
Your video title says Texas but you showed Carolina. Two very different styles although you can only do brisket one way but ribs on the other hand... In Texas, you get huge beef lolli-pop ribs, and in the Carolinas pork spare ribs. After smoking meats in Texas for 10 years then moving to Virginia I do pork. Now, there's a big difference between North and south Carolina BBQ also when it comes to sauce. I'm a Texan and get strange looks when I serve up Q with no sauce. I just tell these uppity people the meat should stand on its own and the only ones who serve it with BBQ sauce are covering up their mistakes. It was great that you ended in my beloved Texas and nice that you didn't fall under the Franklin BBQ spell. There are maybe a handful of original places in Texas that are 100% better Blacks BBQ being one. The problem is a lot of them are off the beaten path and why Franklins took off and became the famous place it is it's in the new hipster city of Austin.
Its a fair comment! However, I actually only spent 5 days in Carolina, but spent all my time with Texas pitmasters, cooking Texas BBQ. I didn't cook any Carolina BBQ such as whole hog, or anything like that. I just happened to film more of my time in Carolina.. But the trip was intended to be spent learning from the best in TX
@@WilsonsBBQ, Sorry I busted your balls kid. It was a great video. You get back to the states you'll have to do a few more as we have great Q from Kansas all the way east to the Atlantic. California does a whole different Q from anybody else. Next time you are in Texas try our great Tex-Mex fare.
