Adding some tomato sauce to the bell pepper mixture will help the bell pepper cook more thoroughly and cook a little longer. Also, I love it with some chili powder cooked into the sauce. It gives it just the right kick. The recipes look delicious.

I switch up the flavoring all the time with stuffed peppers. Will do taco seasoning one time, Italian flavorings or even a stroganoff.

You can also boil them in water for 5 to 10 minutes before you put them in the oven and it softens them

Great ideas for a quick homemade lunch or dinner. I have always cooked for a family of 4, now that my girls are grown, it's hard to find something to cook for 1 or 2 people. These are awesome and quick! Thanks, I'd love to see more.

Hi Halie! I’m not your typical viewer probably. I’m a 59 year old Nana that loves to paint, draw and explore my creative side, including porch gardening some veggies and herbs to cook with. I have ulcerative colitis so good is a HUGE challenge for me too. I know you weren’t a huge fan of the stuffed peppers, BUT try them with mixed colored peppers, add more spices and moisten your meat, veggie and rice stuffing with some fresh tomato purée (or use canned) and definitely bump up the seasonings. I have an awesome Hungarian Stiffed pepper recipe that I use a lot that uses ground pork, but you can use ground beef too. It really makes a HIGE difference to add the moisture into the stuffing. AND I challenge you to use fresh parsley and dill with your salt and pepper spices! It’s amazing. You can stuff cabbage rolls (once blanched in hot water just like you did the tomatoes) and then bake them in a seasoned and slightly watered down tomato purée. I think you are doing an amazing job and I look forward to lots more videos on your new channel journey. ❤. Blessings, Nana Jan PS. Halie, You can use red or orange bell pepper instead of green ones, or even use zucchini or, my fav, eggplant! I carve the middle of them with a small spoon then stuff and boil them with water, olive oil and tomato sauce. Usually I stuff them with raw rice and red lentils (or minced meat) & any chopped veggies + the "insides" of the zucchini/eggplant that I carved out. Boiling them gives you a warm cozy meal in winter 🥺 so yummy

For the stuffed peppers use a red bell pepper they tend to roast up a little sweeter. and add like other mentioned some tomato sauce or even some salsa in the filling. I tend to cut my peppers in half (cut top off and in half vertically) and if you cook the peppers empty while you make the filling they get a little softer not so crunchy) definitely going to make those chicken tostadas

Good Job! Thank you for sharing. You might try red or yellow peppers for the stuffed peppers. Each has a slightly different flavor. You can buy a can of roasted corn that would enhance the flavor of the tostada.

Hallie, I will give you a few suggestions, add more seasoning and also add some tomato sauce to the mixture. As for green peppers, my kids do not like green peppers as much. So for them I use yellow, orange and red, they are much sweeter and not so strong tasting. I would place my filled pepper in the pan and add 1/2 inch or less of water. The steam in the oven will help soften the peppers a bit. Or you can place the peppers for 3 min. in boiling water. Remove immediately after 3 minutes and let drain and dry and then fill. I love your enthusiasm to venture more in the kitchen. Take care.... and enjoy.

I am allergic to wheat and have a hard time finding gluten free items to that are totally wheat free. Your recipes gave me some good choices.

great job! I shared with my friend who is gluten free I think she will love some of these! you might try cooking your stuffed pepper in tomato sauce with the sauce getting down in your peppers with the stuffing it may give you what was missing.

Looks good. You could cook bell peppers for 15 mins on their own before stuffing and adding stuffing. Yes, you should add some more seasoning or add a little taco seasoning...

Thanks Halie, my daughter has gluten free troubles like you. Your recipes are great to see as it allows us to get different, new and exciting recipes that we have not heard of here in Australia. I’d add tomatoes, lettuce, sliced black olives and sour cream on the tostados. But all the recipes looked amazing Good job!

Looks great! You're lucky because you can eat cheese. Being lactose intolerant on top of a gluten allergy is a challenge. In regards to your wraps you can make a quick and easy sauce. Just use mayo, melted butter, Italian seasoning, garlic powder, ginger powder, salt and pepper. You can also thin it with milk.

Best video! Nice simple recipes. I'm gluten, dairy, & soy free and I try not to over do carbs so.... These are good ideas and easily adapted to be dairy and soy free. I needed to get out of my food rut. First I'll try is the pizza....and I'll drain the chicken and hope it's not so moist in the middle. Thanks!

Halie, maybe using another color pepper would make the stuffed peppers better. I am not a big fan of green peppers, but love the other ones. Much sweeter imo. The frittata looked amazing! I love just about anything w/zucchini in it. The tostadas looked amazing!!! Nice new series!

Great job Hallie. I have done the stuffed peppers a lot. We do not care for the flavor of the green peppers but we love the red Orange and yellow peppers. Give them a try sometime. Also there is a recipe for stuffed pepper soup that I think you would love. It's pretty much the same but you chop up all the peppers and then you add more tomato sauce and tomato paste. It's really really yummy.

I really enjoy these recipes! My husband has a gluten allergy, and I have a stomach disease where the gluten free stuff is too heavy, so these lighter recipes are awesome too see! Also love seeing your boyfriend helping you in the kitchen, my husband and I cooked together all the time when we were dating, and we try to as much as we can now.

I would like all these recipes. You can use cauliflower for pizza crust too. I would parboil the green peppers for a few minutes to give you a softer pepper and rice is good added to it too. Yummy recipes.

Invest in a Spiralini and it comes with 4 different cuts....So Easy to do! Love All your recipes, Especially the bell peppers....Make at least every other week....Yummy! Tip: preboil your bell peppers...

I don’t have celiac disease, nor do I eat gluten free, BUT, I would absolutely try all of the recipes you made, excluding the zucchini and mushroom recipe. Only because I don’t like mushrooms… at all….. UNLESS, they’re cut up tiny in green bean casserole at Thanksgiving. But other than that all the other recipes looked like something I’d try to make and eat. 😊

I liked this video. For stuffed peppers I like to use red/yellow/orange peppers because I like their flavor better. As some said, tomato sauce would help. I’ve used riced cauliflower in place of rice. And cook them longer. Great job. I would like to try some of those recipes.

My daughter has celiac she was diagnosed at 1 and will be 20 this year, love your GF videos . On the stuffed peppers try using a red one and add some ground sausage next time. :😊

Halie, all of these recipes sound great!! I will definitely be trying them!! For the bell pepper recipe, I would have added some garlic powder, tomatoe sauce, and/or diced tomatoes, and it covered with foil 3/4 the way through (don't put extra cheese on top yet). Take out of oven, uncover and sprinkle with cheese on top, put back in oven for 15 minutes or so. Maybe, next time, get a ball of mozzarella and shred 3/4 of cheese for stuffing mixture. Slice the remaining cheese to place on top....bake until well melted). You might only need to use half the mozzarella unless you are cooking for more than 2 people, or you could have leftovers!! Loved the video ❤️❤️❤️!

Have you tried veggie pizza that’s just a gf crust of your liking, mix cream cheese & ranch powder pack (I use 1/2 of the ranch powder) spread the cream cheese/ranch mix on top of crust! Then cut up any veggies. Add them and some cheese on top!

Walmart has a gf cauliflower crust I like! Two in a pack and it’s only 5 minutes to cook the crust! I like crunchy crust! The name of the crust is Caulipower! I would post a pic but I don’t see where I can

Maybe instead of using the green pepper, you could maybe try a red or orange bell pepper. They are a little more sweet. Love your video!

This is probably one of my favorite videos you have posted. I would love to see some things you are when you were younger. Maybe something your mom made you when you first figured out you couldn't have gluten. My daughter is 9 and we are just starting our journey but it's so hard to get her to eat anything.

Thank you. Being the only gluten free person in my family this was helpful! I’m wondering if the pizza would have been better if you made the crust thicker? Also the bell peppers I would cook the meat with taco seasoning and do chicken instead of beef since I can’t do red meat.., but other than that looked really good. Maybe a different color pepper. Anyways loved this video!!

I don't like green bell peppers myself so I use the milder red yellow or orange bell peppers also at a little tomato sauce or something to your stuffing so it's not so bland.

I think mixing your egg first distributes it better through out the chicken or whatever you are making. Lid on the blender is safer and less chance for mess. You had enough sauce for 2 pizzas. Definitely squeeze out as much liquid from your chicken (or tuna) before using it.

I love the gluten free recipes! I have non-celiac gluten sensitivity and I try to be as gluten free as possible. The pizza crust sounds like a game changer for me. It will definitely be cheaper than buying frozen gf crust. I’d love to see more cooking and gluten free lifestyle videos.

Parchment will help the crust not stick. Spray with oil and add the mixture.

I just want you to know I made corn tortillas in the oven, and my husband loved the tostadas that way, I loved them as well, didn’t think to do the tortillas that way thank. Husband ate 2 usually he eats 1 and nachos. I’m learning from you and I’m 65 yrs . You are a blessing
