When I make fried pies, i make biscuit dough. I vent the top with a fork, and that helps the inside get done by releasing some of the moisture. I learned how to make them from my mother-in-law. We used dried fruit and reconstituted it. We deep-fried them, and when they float, they are done.
Kim, we have a fund raiser for our church twice a year. We do apple pies. We sell them for 1.00 each. We do it for 4 days. We use can biscuits, but the cheaper thin one, 10 count. We cook the apples , we put them in fridge to let them cook. Or cook then the day before. We put sugar, cinnamon and apple pie spice. Roll the biscuits out, they are gonna be thin. We bake ours in the oven at 400 degrees. We use butter crisco in the pan. Put in oven and let the crisco melt and pan is hot. We put our pies in the oven , brown on both sides. They let them cook. We sell around 9000 biscuits each time. And they are so good. I really think baking in the oven is the best way. Love your channel all the way from North Carolina.
Just started watching Rob and Tina's new RU-vid videos. I am struck by how much you girls truly look alike. Your smiles are similar to Gigi's.. You are all so beautiful! Also I eat keto/low carb and trust me in 19 years I have had many, many fails in trying new things. The only thing I hate about those fails is the cost of the ingredients. But I have learned so much with trial and error.
Kim, I used to make these years ago but I would use the canned pie filling. And instead of frying them I would bake them in the oven since that's how you would cook the canned biscuits. Also you could make a glaze and drizzle over them. I think frying them especially using the larger biscuits, that the outside is going to cook before the inside cooks. But you gave it a try. My grandmother used to make these for us kids when we'd stay with her in the Summer. I don't remember her using biscuit dough though. Been many years ago, so I could be really wrong. I believe she made pie crust to put her's in. Most of the time she used cherries for the filling cause they had a cherry tree in the back yard that she'd have us climb to pick cherries from for her. Lot's of great memories. Either way Kim, your pies were a great idea. What if you use cressant rolls? Roll these out? Those would be really thin and flaky.. just a thought.. I love to bake on rainy and chilly days too. I'm going to have to try these in my air fryer and see how they turn out. 😊
My mom use to make these. She used the regular small biscuits and different pie fillings . We would sprinkle powdered sugar on them. My favorite was the lemon ones.
Kim, Cooking with Brenda Gantt makes fried pies. With homemade biscuit dough that she works more flour into so dough is stiff and the filling she uses like a pie filling. She also has much more grease and does what she calls ‘deep fat frying’ .
I'm a big fan of cooking with Brenda Gantt, too. I never thought about using my biscuit dough for the fried pies, until her video on biscuit making . She is very easy to follow.
I think that having a deeper pot with more grease will allow them to float and not get too brown. Chopping the peach 🍑 slices up a little bit might be helpful, too. Anyway, I’m sure they are going to taste great!

Kim I make these in the air fryer. I brush them with butter on each side before they go in. It kinda glazes them. I also use the cheap no layer biscuits. It has taken me a bit to get them right but they are so good. I also use cherry, apple, peach and pretty much anything you can make a pie of. The chocolate is my grand kids favorite. I just use chocolate pudding for those. Good video❤
That's not a fail in my book. The crunch on that last one you bit into made my tummy rumble.😂 I have both Grands and peaches and I will be trying my hand at hand pies too, definitely. And though I'm sorry PawPaw's goat got out, that rain was a beautiful sight to see.
Kim, I am too lazy to make fried pies. I use flour tortillas. I lay them on a baking sheet and put apple or cherry pie filling (sometimes I use Nutella) in them on one side and fold the other side over. I bake them in the oven at 350 degrees until they turn a light tan on the edges. I sprinkle powdered sugar on top and use a fork and knife to eat them. You have to be careful because the filling gets really hot.
Hi Kim... Others may have said this but, i would suggest not sugaring the outside until after they are cooked. The sugar is burning making the outside too dark before the inside is done... Just my thoughts! Love you ❤

Suggestion: Ideally when frying handpies you want enough oil in your pan so they float and don't sit on the bottom of the pan. Otherwise the outside gets much darker from sitting on the direct heat than they normally would. That and correct oil temperature should thoroughly cook them but be a much lighter crust. I use a mix of confectioners sugar and milk to glaze them. 🤗
I make these all the time The thinner your dough rolled out the better your pie The tiny regular biscuits work better ! My family loves them !! I do make a powdered sugar glaze and drizzle over them ! Too good ! I can’t keep from eating them !!
Hi Kim I use croissants for those much more flackery. I stuff them with a chicken, cream cheese, butter and spices to taste. Makes a great homemade hot pocket.
Kim, I get you. This was all about using what you may already have on hand. I think a lot of people missed that important piece of information. I don't bake, so I thought they looked fine. I am Mexican, and I always like the darker more overcooked tortillas, so the first batched would have been gone in a second down my mouth. Practice makes perfect is what my Nana always said. P.s. if I go to a Mexican restaurant I always ask that they cook my tortillas extra. ❤❤❤
Morning Kim, when I used to make fried pies I'd do them in my pot so that they would be deep-fried and they'd float when they're done. The cast-iron will always make them darkrr. If use a Silverstone because it doesn't brown as much cast-iron retains heat. But I stopped doing that and started baking in the oven because oil is so expensive. But another thing that I would do is make small or a big tarte's. Where I would just roll the dough out flat with a little rim you know like pizza dough but not that large of a rim and I would take my peaches or pears dry them and just lay them out flat all the way around I would take the peach juice, cinnamon, sugar, a little vanilla snd a pat of butter and boil it down until I got a thick syrup and just spoon it over the fruit. And just take one of your little tartlets or cut you a piece of the big tarte put a little whipped cream on it if you'd like and it was delicious and very easy I know it it seems difficult but it really isn't the hardest part is rolling out the dough but if you do the small tartlets it's easy I don't even care what shape it's in, it can be a square or round it all eats the same😅

Great idea, they look delicious... I think they might be doughy in the center because of the canned peaches... there is just too much liquid for this. I think if it was pie filling rather than canned fruit, it would have been perfect! Can't wait to see if you make them with the pie filling. Failing is learning... a great way to figure out what works and what doesn't.
I stopped using Crisco years ago. It is a transfat and there is no safe level. Well....I also switched to organic flour due to Roundup residue and pesticides on regular flour or regular breads or biscuits. I don't buy alot these days unless it is safe. I admit to a weakness for HEB empanadas or turnovers though! 😮 Thanks for sharing your results! I do try turnovers every once in awhile. I bake mine in the oven though.

I make these with grands biscuits and apple pie filling. I roll them out a little more than that and I bake them in the oven. That’s the way my Mom used to make them. Your second ones looked better and they look good!
Love your channel. You should look up 'cooking with brenda gantt'. She makes fried pies with her leftover biscuit dough a bunch. She adds flour to change the consistency of the dough. Kim I buy the cheap regular size biscuits. Roll them out and I buy can pie filling and put in them. Depending on the fruit in pie filling when I take them out I sprinkle the cinnamon sugar on top.😊
You can buy ready made pie crust. I like to use them they taste good and makes my life easier. Anything that makes it easier I’m all for it. Looks good. You could try them with sweet potatoes or pumpkin for a fall flavored pie. Yum
I’ve only seen half of your video so far but I think the crescent rolls would work great. I’ve used them for lots of different things and I’ve used the layered biscuits to make the pecan wheels.
I would make mine with blueberry pie filling, yummy. I have a sandwich maker, I've had it for at least 25 years. I have made all kinds of sandwiches in it and my two favorite is pizza and blueberry. When I make the blueberry one I use blueberry pie filling and when they are cooked I put powered sugar on top of them. They are just like a turnover and only take minutes to make. My grandkids love them. The pizza ones are great because each person can have whatever they want on theirs. You would never know that the crust is bread.

I use the regular tube of biscuits not the kind with flakey layers. I also prick the top of the little pies with a fork to vent and help the inside cook. I use canned pie fillings for the fillings.

Try a deeper pot with more oil which would allow the pie to float instead on lying on the bottom of the pan ……they would not get too brown before they are thoroughly cooked. Chopping the slices might also help. They will taste good anyway!

My Mom always made fried pies with biscuits dough. She used apples, peaches, and chocolate and sugar mixed together. They were great! My aunt made them with biscuits too. Mom would put a few holes in top of dough with the prongs of the fork. I guess to let steam escape. Keep from puffing up. I think a regular biscuit would work better too. ❤❤❤❤❤❤
These look really good! I have done the donuts but now have to try these. I feel bad for all animals that are frightened by storms with thunder and lightening. Both my dogs were terrified and their hearts would pound so fast and shake and lay on top of me and I always thought they would have heart attacks. They never would of survived outdoors in a storm by themselves. I learned for indoors no matter if 2am and I had to work in the morning when it started storming I got up and turned all the lights on and turned the TV on louder and then we were all able to go right back to sleep cause they could no longer hear the thunder or see the lightening through the blinds. I was too tired to care about lights and TV being on we would snuggle a couple minutes and zonk out. I feel really bad for outdoor animals when they are scared.
Oh my, my Mom used to make these for everyone when we were little. And I also make them now, which I have for yrs now. I usually make cherry, apple, strawberry,peach and blueberry ones. Mom always made her own dough, however I use the shortcut and use the can biscuits myself 👍😁 There so easy to make and I love to snack on them. I never did put mine in the freezer tho. Now u have me wanting to eat some, 😂 I guess I’ll have to make me some tonight or maybe tomorrow because I have a busy day ahead. I kinda do some pastry like yours, but I use crescent roll sheets use my pizza cutter & cut them into strips take the strips fold into a square & roll them out like you did & stuff them with fruit of choiceseal them. But instead of deep frying them, I use my air fryer oven. They are a great snack for the hubby for his lunches or watching a movie.. I really would call it a failure, as it's more like trial & error..
You can make a danish using 1 sheet of puffed pastry. All you do is cut 1” slices on an angle down bth sides of the pastry leaving a center that is 3 inches. Spread cream cheese down the center, then arrange fruit on top of the cheese. Pull the strips inward over lapping the strips in the center. Bake 350* for abut 20 min. Or until golden.
We always use refrigerated pie dough..we bake them now but used to fry them in the Fry Daddy..remember those? Big pots of oil..lol..just better for you and easier to bake...but those fried ones were soo good..lol..we did the same with savory meat pies that had beef onions and peppers in them...memories of my mom❤
When I make fried pies, I use the canned peach, or apple, or cherry pie filling. Just spoon it onto the rolled out biscuit, don’t need to add anything else, unless you want to drizzle it with a little thinned powdered sugar, or just plain sugar, or sprinkle powdered sugar in top. Just the canned fruit alone, there is no thickening in it, and it would be way too wet for the filling..I like them just fried, but deep fried, they are amazing. I pick the top in a couple places with a fork. If you are going to use just plain canned fruit, you need to thicken it with some corn starch or flour. It really needs to be “ pie” consistency. Lemon pie filling would also be very good.

Sprinkle lil cinnamon sugar on filling ....I make these using pecan apple butter (brown not red) and bake in air fryer..,.. nothing better on cold morning with coffee
Hey Kim, you should do the same thing, but put them in the air fryer. They’ll cook all the way through that way. I believe lol 😂 what a great video, though!!
If you have one of those little snack machines, you can make them in there. Easier and quicker, used to make them all the time. Spray the machine with pam or something, so it doesn't stick, put a piece of bread on each side, add your filling and then cook them as long as you would like. YUMMY!!!!
Hey Kim glad you tried your hand at hand pies! Kim you need to have your grease deeper in your skillet best ti fry them in a deeper skillet or pot and roll your dough as thin as you can get it to have a thin crispy crust and dust your wet peaches in cornstarch to help dry up the moisture on the peach or use pie filling so it’s thicker ! If you use hand made biscuit dough work more flour into it like you would for dumplings and roll out as thin as you can get them ! You’ll get it , just keep trying ! And dust them with powdered sugar or make a thin glaze out if powdered sugar and water and drizzle over them ! So yummy ! Great job Kim 👏👏👏

I have weird sense like this and all of a sudden like 30 seconds later you mentioned that Tony tried the pies. This happened to me earlier in the day with my husband. Sometimes it freaks me out, but this time i was like, I wish your son would be in your videos. I would like to see a face with his name. I’ve made them with biscuits also. Separating the layers is a great idea. I cut up my peaches then, sweetened and thickened the peaches with a little juice. I think that would help the juice not absorb into the biscuit dough. I also waited til after they were cooked to add my cinnamon and powdered sugar as sugar might be why yours were getting a little dark.
