I go to a cow farm in Mezapa, Atlántida, to learn how mantequilla sour cream and quesillo cheese are made in Honduras. I milk cows and learn to use the machines to separate skim milk and cream (which turns into mantequilla sour cream). We curdle the milk with a mysterious powder and mix it with whey. When the cheese curd hardens, we add salt. The last step is the most difficult. You have to heat the cheese with fire and cool it quickly in the air to turn it into the famous quesillo cheese catracho.
I bring the mantequilla sour cream and quesillo cheese that I made by hand to my friends. I serve them plantains with mantequilla, tortillas with quesillo, baleadas with mantequilla, and tamalitos with mantequilla and ask them to give me a score from 0 to 10. Is it possible for a Japanese-American to learn to make Honduran mantequilla and quesillo catracho? Let's find out together.
