Rilakkuma Mochi Recipe
Ingredients (makes 8-9 pieces)
2/3 cup shirtamako flour (get it here! amzn.to/3tWT6zU)
1/3 cup water
brown, yellow and black food coloring
wooden skewers
1/2 cup water
3 tbsp granulated sugar
1 tbsp soy sauce
2 tsp katakuriko (potato starch...NOT cornstarch lol)
Directions
1. Very gradually add the water into the shiratamako flour, mixing with each addition. When all the water has been added, it should retain its shape when placed on your counter. If it's too soft and starts to lose its shape, add some more flour. If it's still crumbly, add a TOUCH more water, but do so very sparingly.
2. Divide the dough into one large portion and 3 small portions. Dye the large portion brown. Dye one small portion black, one yellow and leave the remaining piece white.
3. Divide the brown dough into 8 (or 9) pieces. Working with one piece at a time, roll 90% of that piece into a ball, then shape into a flat oval. This will be Rilakkuma's face. Use the dough you removed to create Rilakkuma's ears. Stick them to his face. Repeat with the remaining brown dough and place them on a plate lined with plastic wrap. This is important because the mochi will stick if you just place them directly on a plate!
4. Use the yellow dough to create the insides of Rilakkuma's ears and the white dough to create his snout. Use the black dough to create his eyes, mouth and nose. If you find that the dough is crumbling too much, you can use nori seaweed and a Rilakkuma face punch (linked below). If you do this, attach these pieces after the mochi has been boiled and removed from the ice water bowl.
5. Place your Rilakkumas into a pot of boiling water. Once they rise to the surface, boil for 4 minutes, then place them in a bowl of ice water. This will stop the cooking. Leave them in the water bowl while you make the sauce.
6. Place the water, sugar, soy sauce and potato starch in a small pot and whisk to combine. Set to medium heat and continue whisking until the sauce has thickened and has a similar consistency to honey. Pour into a small dish.
7. Skewer the Rilakkuma's onto the wooden skewers and set on a plate of your choice. Spoon the sauce on top and enjoy!
