From mariam Ahmad Thalassery Kerala .i suggest doing the quick and easy way. I wash dry and get the matta rice ground and roasted from the mill. Then make a dough with hot water and make idiappam. Same method as we make with raw rice

Another way, which is faster, is to slightly cook rice ... just 30 secs. Then cool and grind. Now heat resulting batter in pan till it gets right texture for pressing in mould. Steam the iddiappam.
You make it seem a cake walk.. but trust me dear, my preparation method is the same and i find it so laborious n messy too! Hahaaa.. How i wish you could tell me the source of your mortar and pestle (jaggery one)? You'd do?
Yes I can understand. It may depends on the rice quality. Also you can do in different way. Once it start whistling reduce the heat for 10minutes and slightly increase the heat to make it whistle and reduce the heat for again 10 minutes. continue 2-3 times. Only thing you need attention until it done. Please try. This may helps you. Thanks for the feedback. 😊
Brown rice is very good for health. But Non stick pan is one of the causes of cancer. Playing music is a disturbance. You may speak and tell the procedure for making dishes.
