Hey Foodies, here I have got the recipe of making Idli in a wet grinder, along with a tip which makes the Idly Melt in Mouth, and pillowy soft! This ratio and method is inspired from the restaurants/tiffin centers in Hyderabad. Many places use more rice rava than the ratio we are using :)

Ingredients:
1 cup Urad / Whole Skinless Black Gram
3 cup Idli Rava (Cream of Rice)
1 cup Poha (Rice Flakes_
1/2 tsp Methi (Fenugreek Seeds)
Water - to wash & soak
Salt - to season

Hi Yamen, you have shared a healthy recipe to all, it is a break from oily foods. In South India we always use cloth, from my great grandmother's time, this is our method. Including in roadside Idli eateries too same method is followed. No need to squeeze water from Idli Rave, you can use the excess water that was used while griding urad dal or water used to remove the dal struck to grinder and mix the same. Do not add salt during fermentation. Always mix with hand, so that the natural bacteria from hand hoes to batter and speeds up the fermentation, that is THE main trick to get fluffy Idlis.

Good you showed the wet grinder method. Really makes a big difference. However a small point. It wont take 15 mins to grind the urad n poha. This is method we have been following for ages, even using idli rice instead of rice rava.

I was a bit skeptical to try this recipe as I have not tried any from this channel. This came out so well, I cannot believe, the taste reminds me idly's at Sukh Sagar in Mumbai, you can imagine. We made them last week and I am already craving for more. I tried to buy the food grade cloth which was used in this video but ended up buying a muslin cloth which certainly did not work and ended up using no cloth. A high thank you to the young chef from CookingShooking, well done. I am a new subscriber your channel.

All hotels in south use the cloth..we ppl from south eat idlis very often. We squeeze the idly rava exactly you mentioned, but the methi and poha are used for dosa batter & not idly Batter. Idlis make up favourite breakfast.😋

U can use small stainless steel tumblers instead of d idli stand and fill water in a kadai close it with a lid and use it as idle steamer. Only d kadai has to be a little big. And this way u can have idlis of different shape. It will be like d idly without cloth in the video

Finally the tricks are out! Had to totally depend on on outside for soft idlis. I always assumed clothes were used to make it easy and quick release from moulds in restaurants

Super from Chennai Normally we use idly rice and used to grind separately in grinder n then to Dal batter n ferment 12 hours.

Being a tamilian, who eats idlis even twice a day sometimes(for breakfast and dinner) (bcoz idlis can be cooked in a jiffy for d whole family in one go) my mom always used to sprinkle little cold water on the cloth before removing it from the idlis. That way u can have the idlis steaming hot on the plate. Else u may have to wait a little while before peeling off the cloth...... The chutney using all ingredients raw can be made while d idlis are cooking... The best part no strict rules on proportion. Any excess or shortfall in the ingredients can always be easily adjusted while grinding...its hard to go wrong with proportions..just green chillies, coconut and salt will do....
