The dough has aspects of a puff pastry, but it stretches like a pizza dough or candy, but it doesn't snap back at all, so you can make it very thin, like the thinnest pasta or even filo dough. With a rich, orange custard centre. Yet the dough didn't flake and fall all apart when he cut and opened it. I could dig through my cookbooks, I still have 40 or 50, but I genuinely, in this moment, do not know the name of this. I enjoyed his skill... with the dough, especially. @@johnmejia1468 Oh yes. I still enjoy cooking and baking very much. I began working in kitchens at the age of 15 and worked my way up. So I learned to cook in a professional setting, and in large batches. Becoming a home cook (which happened in my 30s, when my daughter was born, and we were both diagnosed with celiac disease so I had to learn gluten-free cooking & baking) was an awkward shift. Before then, I worked 12-18 hours a day, usually 6 days a week, so I just ate at work for the most part. I got better at it though, and now, in my 50s, I enjoy it quite a bit. Last summer, I was put on a medically necessary low-fodmap diet, so I've been altering recipies and learning to cook without things like onion, garlic, or honey. I'm getting to be as good at it as I am at keeping a 100% gluten-free kitchen. I enjoy making both the dishes that I love, and finding others that are totally new to me. I rarely eat processed foods simply because I enjoy making things for myself. Being retired (and empty nesting) means I can cook what I want, when I want... whether that might be a curry that takes 2 full days, or a pizza (or pie, or batch of cookies) at 2am on a random night.

I love the Italians. They are distinctly European. They have their own culture and exceptional cuisine. Pizza, which has invaded all the homes of this planet, is one of the forms of Italian creativity. Then they are a people who sanctify the family, unlike the rest of the Europeans. The city of Venice, pasta, these are things that take hours and days to talk about. I respect that country and I will visit it one day. 😊
