I grow Japanese eggplants. When I harvest them I store them on the counter but sink the cut edge into water which helps them retain their turgor pressure. Even days later they taste like they've just been cut from the vine. Enjoy!!
Lol for the varieties that produce a smaller variety. For eggplant i look for the Chinese snack long eggplant, or the smaller egg shaped ones. Same for tomatoes. Try having a pot that can also hold enough soil like 2 gallons. This will aid with watering. Only plant what you like to eat. You can also grow fruits in pots on your balcony. I have even grown apples, gooseberries and starwberries. Mmm. Good luck.
Nice! Grilled or fried eggplants are great. Bought a lot of different seeds this year (not just eggplants, but cucumbers, tomatoes, zucchini and smaller stuff as well!), hope for even better harvest next year!
I looove eggplant.... My favorite would be the eggplant rollatine ~ next fav' with fried tofu, chili's, and fresh basil with steamed rice and plenty of chili paste ~ third fav' prepared as baba ganouj, smokey char, great olive oil, fresh and warm pita. (Don't forget the feta, olives, hummus, dolmades, et al... Great food, all around ❤️🌱🌿☘️ Edit: Forgive me, the point besides my typing fart was to state how beautiful these eggplants were to begin with. I get overwhelmed with the food passion...
I’m growing eggplant for the first time this year. Black beauty variety to be exact. My plant is on steroids. It’s massive, I already have 6 plant stakes holding parts of the branches up off the ground and have picked over 30+ eggplants already.

Im trying to grow eggplant but the drought and heat are taking their toll and stunted their growth (and one was left a bit pitted) should i have mulched them or put garden mesh on them to help retain moisture in the roots?

I made breaded eggplant and fried it (like a chicken cutlet) like you’d have with eggplant parm but I cut them really thin and my husband loves it that way. Also if you go to this guys channel he has a video of how to make an eggplant dip almost like a hummus which looks really delicious.
Cut them in rings put some salt & vinegar and let it sit for about 30 minutes than rinse them & fry them individually into flower and eggs, my best way to eat them

Only have 2 flowers on them so far😁I planted the whole pack od seeds but only one survived. The rest, I lost it to freaking squirrels. Do you have tips to keep them away from the garden?
İf you do nit want your eggplants bitter you can dice them up put them in salty cold water in 30 min. Then squeeze the water out of them and use them in your food, the water they were in wil turn brown that is the bitterness
65 to 80 days after being planted. Is that from a seed or from a pregrown pot? How long does it take from the time there's a vegetable sprouting to be become ripe?
