Iguana {Catch Clean Cook} "Chicken of the Tree" 

Shame it's so invasive, i generally like iguanas because they can be quite friendly and fun to mess with. But sadly all it takes is people introducing something to an area they shouldn't and it ruins an ecosystem. Hopefully people start going for them like they do lionfish and boars and people who own them as pets don't release them in the wild.

You need to try and curry it. Here in Trinidad in the Caribbean. We hunt them as wild meat, it’s a popular dish to serve them curried in the Caribbean traditional style. Not to be confused with East Indian curry, our style is West Indian, it’s truly amazing

You should try to cook this Filipino style. In the Philippines once in a while, people catch bayawak (monitor lizard) and cook it in coconut milk, ginger, garlic, bay leaf, pepper, whole red pepper, soy sauce, and salt. It is also usually left for a couple of hours on low heat to simmer and get the meat nice and tender. Traditionally we also cook it skin on. This recipe is called "Adobong Gata" works with chicken, fish, duck, sneak, and I guess any meat you're willing to try.

According to Iguana Man, you MUST cook it with the skin on, or you will get iguana jerkey every single time. The skin holds of course,, whatever moisture they have in. If not, all you can do is dry it out.

here in Trinidad & Tobago them iguanas keep far from populated areas, bc they kno they will end up in a pot.. catch and ship them here, even the president would buy.

in Honduras iguanas are cooked in a coconut curry with cassava, plantains and served over steamed white rice.

I had a 6 1/2 iguana that lived free in my house and was fully potty trained...I put rolls of fabric on a cat perch and his hear lamp above it...He would come down each day and scratch the back door to go out...Spend a couple hours in thye back yard and then scratch to come back in...After that would normally lay on my chest on the couch for a bit to get some love and then back up to his perch...He only ate a small bowl of lettuce and some hiabiscus leaves and flowers in the yard...Not sure how they could do so much damage down south...Ziggy was as sweet as could be and lived for 33 years...He even loved sitting on the dash in my van and going for a ride...He was awesome...To bad this has happened...

In P.R. we wash the meat and then apply lemon or lime juice. The pressure cook the meat to tenderize because otherwise, it tends to be on the tough side.
