Here are so tips for the next time you do Swedish meatballs - from a Swede and a big fan. 1) Mix the breadcrumbs and the milk and let them rest for a bit, then mix it with the rest of the ingredients 2) Caramelise the unions and let them cool before adding them to the mix 3) If you want to do a Christmas version you can add some allspice 4) My grandmother (and I) like to add use some paprika powder

In Sweden, the gravy is mostly made by glazing the pan with a little water after frying some meatballs. We fry them in batches. The liquid, with all the good flavors, is then filtered into a saucepan and flavored with cream etc.

I never waste the fond. Oftentimes I cook off the excess liquid for a concentrate to use as a sauce or use in making gravy, no matter what type of meat or poultry it is.

I cooked the meatballs in the oven.. then made gravy separate and mashed potatoes.. then combined.. next time, I'm frying them.

I recently suffered a heart attack, and upon searching for heart healthy recipes I found your channel. Not sure how it happened, but I could not be happier! I’ve already made a bunch of your recipes and I’m happier than I’ve ever been. My heart could explode at anytime, but at least I’ll go out with garlic breath, a full stomach, and a smile on my face! "My heart could explode at anytime" you ok brah? It's your life that is on your line, and family/friends wouldn't want you to end like this. Just find some balance, because heart attacks do not come to ones who live their life in moderation (Apart from genetic factor that could fuck up anyone, but especially the ones not taking care of themselves).

I've been watching your show for a couple of years now, you guys helped me through the toughest part of my life a little over a year ago. Out of that situation I got my son who's now 1 year's old and everytime he hears your intro/voice he stops whatever he's doing then sits and watches. He doesn't understand what's happening but I like to think he's taking it all in and learning, so I just wanted to say thanks for everything and keep up the great work you guys all do.

Love it when you make/tweak/improve upon other's recipes. Some of the best things I've cooked have been because you made it looks fun and easy, and I really appreciate you telling us how to improvise when we don't have the smoker/deep fryer or whatever. I have one that looks like Sams and I've had it for 20 years. It's the Zyliss Susi garlic press and comes with a little studded plastic pusher to dislodge the garlic skin that sticks to the bottom. It's made of aluminum so don't put it in the dishwasher or it will turn gray. Mine is considered vintage now and the new design has changed, but they make a quality product. No need to peel the garlic first.

Here in Texas we fry the the meatballs and then make the gravy in the same skillet utilizing the fond and bits stuck to the skillet; the results are amazing. The IKEA meatballs look good, it just seems like they could easily increase the flavor by 50% or more utilizing the fond.

I love Swedish meatballs, and these look amazing! Added to my recipes playlist! And no, Sam, you're not the only person who's never had Ikea's Swedish meatballs. I didn't even know you could get food at Ikea; I thought they only sold ridiculously hard to assemble furniture. I've never been to an Ikea. Might be worth checking them out.

In Sweden...when you watch "The Muppets", the subtitles call him the "Norwegian Chef". HS cafeteria served köttbullar with baby potatoes...boiled/steamed a a dill sprig.

I too make certain I don't have to subject myself to the hell on earth that is IKEA. This recipe is simple, and looks like it'd be a good meal or late night snack. IKEA gives me nightmares, especially being taken there on some hohum Saturday afternoon where everyone and their grandma is out looking for "Assembly Required" furniture that falls apart in a matter of weeks off purchase.

I have. They're good that way-- if the crowd doesn't inhale them. I do cheat. I bake mine on a covered cookie sheet in the oven and turn them a couple times until they're done. Delicious. Oh yeah. Make 2-4 times the recipe. A group of 20 we had here one year inhaled them in 35 minutes. Seriously.

Yes you can double or triple. Yes, brown them then throw in the crockpot. You can make the gravy ahead but will need to thin it a bit when you reheat it.

pro-tip: Before you roll the balls, grab a little pinch of meat and make that into a patty and cook it. It gives you a good "finished product" taste before you go and roll/cook all the other ones. Say, you forgot salt or garlic etc... you eat the little patty and you'll know how things will be. It's a good "sneak peek".

If you have "leftovers", that means you already made balls. I got two problems with that tip. 1) The exact grams of minced meat provided and other ingredients like breadcrumbs are for exact amount of balls. There shouldnt be any leftovers. 2) If you use leftovers to test if it's seasoned enough, your balls that you made need to be destroyed, seasoned and then again made into balls. Cumbersome. Instead I would say "sacrifice" one meatball, but flatten it so it cooks much faster, and then taste if it is seasoned, before proceeding to shape the meat into balls. You could also divide that sacrificed meatball and give it to relatives/friends whom you cook with and have them tell you if it's nice or if something is missing - or atleast everyone got a little appetizer knowing what deliciousness awaits them.

A Swede will tell you how to do it in a 1000 different ways and that their grandmas is the right one. However, you have to have "rårörda lingon" (stirred lingonberries), No not lingon jam, that's something else, and pickled cucumber in ättika (It's like Swedish vinegar). Don't put your meatballs in the gravy, you put that on the side/on top, don't want them to be soaked.

Finland has a language completely different than the rest of Scandinavia, from what I understand it's from a family of language more closer to Hungarian.

Finnish is pretty similar to estonian language so its branch of finno ugric language closely related to estonian livonian votic and karelian with many words borrowed from indo european languages particularly from baltic languages german and russian.

Great recipe Sam. Additional mods. 1. Add sliced mushrooms. 2. Just make double batch of the sauce. A can of broth is two cups. 3. Use one full pint whipping cream .

Every swedish family has their own family recipe for meatballs. Ikea’s are probably the worst 😉 In my family we fry the onion, don’t use egg or bread crumbs but lots of cream and sweet mustard. They are a bit more delicate to fry but oh soooo much tastier 😋

My mom doesn't use garlic in her meatballs. She is not using mustard either. But darn, they are good. But my grandma's meatballs are a bit better tho. As you said, all recipes in a swedish home for meatballs are different.
