Okay, I decided to try to be internet funny and read up on trickster figures to figure out which one Josh most resembles, and... and... I just found out that Josh messed up by making fun of Belgium. Just look up Lange Wapper as the Flemish idea of a "trickster." Ranging from shapeshifting into a wealthy man, giving out candy to kids and then disappearing with a demonic laugh to scaring people to death in a graveyard.
Josh casually tossing a knife into the cutting board and talking as if nothing happened is a mood... and that no one in the studio reacted to it is telling.
That "shink" of the knife sinking into the cutting board and then it just continues to waiver back and forth from the force... that's the most hypnotizing thing
Of all the times he does self depreciating comments, he throws that knife down into the board at the beginning without a flinch, and for that. I respect him even more.

Josh's comment on cumin at 00:05:00 are so spot on. I'm tired of Mexican recipes just always haphazardly tossing it in when it really doesn't need to be. I've never seen anyone addresses it--Josh ofc using cumin but letting the people know it's really more Americanized versions of Mexican cooking. Just shows how knowledgeable he is about food-culture and how much he cares. Josh is such a GOAT.
I love this because as a cook (around 2000), there was a bar in Baltimore I'd go to after work, partially because the kitchen was open to 1am, and they had a Tortilla Burger, which was basically a burger with pepper jack and a green chile salsa wrapped like the crunchwrap. That, and it came with choice of side, and I'd go with the horseradish potatoes... after a long Saturday night, sitting at the bar, there was nothing better than that an a cold pint.
Josh I really appreciate the fearlessness with which you approach cooking: no ingredient is off limits and all cooking techniques are on the table. My husband would say we are twin cooking souls. (FYI: He's still alive and he eats my cooking every day--for all the haters out there.)
Every episode I watch I wonder if they get Josh really high before filming and wait till he gets the munchies and then give him a massive shot of pure adrenaline then start the show.

When ordering In-N-Out fries, request them to be "FRY LIGHT-WELL!" You can also ask for "fry light" where they cook it lightly but i think its too soft and you can order them "fry well" too but i find that they are too crunchy. Ordering them "FRY LIGHT WELL" has them cooked just a little longer than they normally do but not as cooked as the "fry well." The result is that it has a great crispy outside and soft potato inside that lasts longer, so for people who normally order In-N-Out to-go, try requesting them as "FRY LIGHT WELL!"
When I worked at Taco Bell we made the crunch wraps on like an empanada press grill thing, and because they stay on all day it takes more than an hour to cool them at the end of the night when we close

If you PNW locals want to just buy tortillas, but you also want to make giant burritos like Chipotle or Qdoba, go inside a WINCO and visit the Mexican cuisine aisle. My personal favorite way to get it nice and starchy moist is to bake it on a pizza screen between two wet paper towels at 350 for about forty-five seconds.

Heat the pan medium low flame. olive oil on the rim light layer across pan. steakums. 2 pieces of bread. golden both sides. 1 piece of muenster cheese per side. 1 american cheese slice. a few pinches of grated Colby jack in the other. out of that same pan put the steakums on both pieces of toasts with melting cheese on them. close this concoction cook on both sides a few more moments. best grilled cheese / steakums / $1 cheese steak thing lol
