Y'all, I make this with chicken all of the time and of course with Turkey and it just flawlessly everytime!!! I doubled the recipe but I will be writing for the recipe size Turkey!
-whole bone in Turkey or chicken breast(6-7 lbs)
-2tbsp Olive oil
-3 cloves fresh garlic, minced(I like to grate it)
-2 tsp fresh lemon juice(when I don't have a lemon I like to use organic jarred lemon juice)
-2tsp dried mustard
-1tbsp fresh chopped rosemary leave or oregano or Italian seasoning (I prefer Italian seasoning)
-1tbsp dried or chopped fresh sage leaves(I prefer dried)
-1tsp dried thyme
-1 1/2 tsp salt
-1/2 tsp black pepper
-3/4 cup dry white wine( I like using white cooking wine)
Preheat oven to 325°f. Place the turkey in a roasting pan(rack if you have one) skin side up. In a small bowl, combine the olive oil,garlic,lemon juice,mustard,rosemary, sage,thyme,salt and pepper. Spread the mixture evenly all over the skin and under, if loose. Pour the wine into the bottom of the pan. Roast the turkey for 1 1/2-1 3/4 hours until skin is golden brown and reads 165°, inserted into the thickest area.
**check turkey after 1 hr, if overbrowning coer loosely with foil.
When turkey is done,remove from the oven,cover the pan with foil to rest for 15 mins. Slice and serve with pan juices or turn drippings into a pan sauce.
