Oh my! When you said "set it in a quiet room", all I could think was "will general conversation make it upset?" I am laughing, here! Too funny! I have a 5 year old continuous Kombucha brew going that we all love, mostly. Husband finds it a bit rough. This Jun could be more to his liking.I will start some and see of it is preferred. We have bees, so honey is not a problem.

Good video, just a small advice, when you sample your batch, just put the straw in and cover the other end, and then try it, don't just drink from the jar, you're risking contaminating the scoby with your mouth bacteria.

You can use black tea. Try a mix of green/black. You'll thank me for the rest of your life, very delicious. Work towards all black, try it.

Thanks for sharing. I started a project just to see if I could grow my own scoby, and worked. This Jun tea fermented much faster than regular kombucha. Within 3 days my Scooby was growing. Hopefully by next Friday I'll be making a full batch. Wish me luck.

jun is delicious , I use gun powder tea and raw honey , I usually brew my tea a bit stronger and I use avocado honey wich is very strong , the first ferment comes out incredible , and when I do a second ferment , I use pear and jasmine , it is insanely delicious.

They sell jun scibies at kombucha momma. I personally made my own scobies by just buying fresh kombucha and letting ferment it another month. Now I have huge square thick scobies going in a continuous brew gallon container with spout. Much easier to fill bottles then redo g and pooring. I just trove like three bottles every three days, add more sweetened tea and let it brew continuously. As the scoby gets bigger it brews even faster. Only need to clean out the whole thing if there is too much "mother" (dead yeast that did its job) or the scoby decides to totally block the spout. For switching from Kombucha to Jun, it works to just slowly change the type of tea and sweetener to adjust the sciby from one to the other. Nice video, it is easy to make kombucha or jun that way. I don't taste it until I use it, I'd worry about backwash,, lol. I like brewing strong and put it over ice water with a drop or two if stevia. Yumm. And as for flavor: I am just trying grape as well. So far my favorite was wild blackberries and raspberries I collected in June. Looked KoolAid red, but so much better for us. Nice kitchen in video, wish my counters were that tidy.

Great to hear you enjoyed the video Dagmar and I appreciate the comments and feedback!! I haven't set myself up for continuous brew yet but I love the concept and ease - not sure if my living situation is ideal for that just now, but I'm thinking to experiment next summer. My experience is that regular Kombucha from the store seems a bit more forgiving and easier to grow SCOBYs from. Regular Kombucha SCOBYs seem to grow bigger and quicker than JUN ones too. Some JUNboocha makers, given their environments, tea, honey, water, etc., grow SCOBYs easier than others. Seasons and climate make a huge difference too, I find. My SCOBYs are growing exceptionally well this past month. Canada climates can be great for JUN SCOBYs as the brewing temp is a little lower (65 - 75 degrees) than Regular Kombucha... So many variables... I stick to JUN because I prefer green tea only and honey for the nutritional profile, and I like the taste and lower fizz soooo much better!! We're blessed to have so many choices. All good!! Warm regards, Ingrid

What should I do if it is my first jar and I don’t have the first batch of jun tea to pour into the batch? Can I leave that part out or should I substitute something?

Ian Nicely: I grew mine, by using plain/original GT kombucha from the grocery store as a starter. It took a couple of brews before a real SCOBY formed, I mean a pellicle, but there’s a symbiotic community of all the good microbes you need, in any bottled plain kombucha, which has on the label: “live cultures” or “raw and living”. Make sure you buy UNFLAVOURED kombucha from the store!

Julie Watson yes I believe you can, might be worth while growing out more scobys off the mother first, then with some of the baby scobys experiment, start by introducing one of them, to a mix of black tea and a little green tea and sugar plus a little honey, try converting them slowly to green tea and honey, and with one of the other baby scobys try a strait flip to green tea and honey, might stress the scoby out!!,, just make shore you alway got a scoby that you don't mess with!, ( only black tea and sugar). This way you always got a clean mother to go back too, hope this helps. peace

No. Better to buy a Jun SCOBY. It's contain different bacteria and yeast.

She get Jun scooby from kombucha and kombucha=black tea+sugar Jun=any tea(not black tea)+honey, Jun faster than kombucha which spent 3-4 months.
