Thank you to Emilio and Ciro De Lucia of Euro Frutta 2000 Positano for letting me film with you!
Pasta e Lenticche (pasta with lentils):
Best pasta to sue is ditaloni rigate, 100g per person
50g lentils per person (rinsed)
1 onion diced
1 carrot diced
1 celery stalk diced
1 small potato diced (optional)
1 clove of garlic squashed
500g -1 litre of vegetable broth
small piece of parmesan cheese or some cubed pancetta
rosemary and thyme
Sauté the onion, carrot and celery in a pan until soft. Add the pancetta if using and after a couple of minutes add the lentils, potatoes and parmesan and cover with broth. Let simmer for around half an hour, adding more broth every few minutes. Add the pasta and cook until al dente. You can add more broth if you prefer it soupy or if it looks a bit dry.

Honestly, I can’t get enough of your channel. I only found it very recently (it was recommended), and I’ve watched most all of your videos already. You genuinely can’t make a bad one. The farthest I’ve ever been able to travel was Canada during family vacations across the US when I was young. And my situation now won’t allow for distance travel, so your videos truly help me feel like I’m getting away for a bit (and getting out of my head). Thank you!! I’m addicted, obsessed, whatever you want to call it - lol. All the best to you and your family! ❤️

Nicki and Carlo, It has been a difficult and disappointing afternoon and evening here in the United States of America. Most of us Americans have been watching the news all day, feeling quite upset about the events taking place in our capital and the domestic assault on our democracy. I knew sleep would not come easy tonight with so much on my mind, but have been comforted by immersing myself in your daily routine before I close my eyes to sleep. Thank you for the much needed diversion and the reminder that life is made up of simple pleasures. ❤

Lisa Marie, thank you. Right now my nephew is ok. And I hope your friend is as well. I fear for our country right now. I’m 75, retired, and so thankful I have good memories of this country. Hi Nicki and Carlo, my mother has loved the Amalfi coast ever since she and my father first went on their honeymoon in the early 70’s. Every time they returned to Naples visiting dad’s family, they always made sure that they returned. Five years ago mum was diagnosed with a degenerative neurological disease, it has progressed quite quickly and she is now wheelchair bound, so even before Covid-19 travelling to that heavenly place you call home became impossible. We have found your channel and I just wanted to thank you so much for all your hard work and allowing mum to walk those 500 plus steps with you. It makes mums day when she see a new post and it makes mine knowing that she has something to look forward to. Thank you both for making lockdown with a lot of health issues a little easier.😘

Lady that works in this shop is so lovely, she managed to get us little tubs of delicious cherries in early June. Delivery was also a made staying on the mountain much easier. We stayed in Via Liparlati very close to a little Church (St James?). Enjoyed joining the local ladies there on a Friday evening who were saying the Rosary. I must say it was one of the highlights of our Italian trip. The calm atmosphere in the Church and the comforting voices of the women reciting the entire Rosary was so spiritual and beautiful!

I love the small neighborhood grocery store. The owner takes pride in what he sells. My dad had a small Italian grocery store, catering to immigrate Italians for 29 years and he knew every one to the children and grand children. I usually visit the big box stores like Costco once a month but I still prefer to store at the small neighborhood grocery store every 4 days for fruits, vegetables, dairy and bread. I love the concept boutique foodie store that have unique products from all over the world even thought I migrate mostly to products imported from Italia! Great segment Nicki!

Hello to you all - I just watched a video you made Nicki in August about the fires when you came out in the morning. A few hours later Luca was tending to the tomatoes and when he put them on the table I noticed slices of lemon on the other side of the table (I think they were lemons) and wondered what you are using them for. Not sure if you were drying them perhaps like apricots? You're channel is definitely addictive. I try to watch others but I'm consistently going back to yours. You have such a natural talent Nicki and your voice is very soothing. I think you've become a star vloger. You and Carlo and Skye et al have certainly made many people happy with your videos. I loved this video! I can attest that all veggies & fruits taste delicious in Italy. I can't get enough of them when I'm there. Short story; a few years ago I took my Aunt to Italy - she was afraid to try anything with a tomato sauce due to severe heartburn. I told her it wouldn't happen because Italy's fruit and veggies don't have all those chemicals the U.S. does ..she tried it & was amazed she did not get one single heartburn during the 2 weeks we were there. It's been a love story ever since 😂

“You are the worst”. Cracked me up. I lived in Rome from ‘69 to ‘72, and have always missed Italy. Spent 6 years in German, and one year in Morocco. Love your content, as you’re always interesting in so many ways. Keep up the good work, and I’ll keep steering folks to your channel. Take care.

So exciting to see all your new followers and their comments! They are finding out what we’ve known all along, you have the best vlog/channel on RU-vid! 😁 I loved the grocery store shopping! Glad they will deliver! The pig feet and lentils for the new year sound similar to our southern tradition in the US...I’m originally from Mississippi and we cook black eyed peas with a ham hock or chunk of ham and put a “cleaned” penny in the pot! Whoever gets the penny will have an extra good year!! Your lentil recipe looks delicious, I’ll have to try it! ☮️ and love 💕 from Michigan!!

When I am in Italy I absolutely love to go to the stores and next time I’m in Positano I plan to go to this market! The fruit is so much better in Italy. I made lentils for the first time on New Years, as a kid I didn’t care for it and I used to pick the pasta out to eat which irritated my mom. I enjoy it now! You brought yet another memory of my heritage back, and good to know what the symbolic reason is for the lentils. Thank you Nicki for another fun video and Happy New Years to you and your family.

I second what Liz has said . I too thoroughly enjoy your videos and find it all so interesting. Somehow I think I won’t be travelling overseas now what with Covid and all and nearly 65 so I just love seeing how and where you live . I am on the east coast of Australia in a seaside town but much different from Positano. I would loved to have travelled there but think I am seeing far more watching your videos ❤️❤️🥂

👍🏻 I’m going to send this to my twin brother who’s just returned to work in Abu Dhabi. He’s having to isolate for 10 days with a tag, he’s not allowed out. As a consequence of this he has to phone his local store for grocery deliveries. But, they get things so wrong. 😆. He said he asked for butter and he got a side of beef 🥩 etc etc. He laughs about it. My favourite apple is Cox’s pippins. So sweet and small. I’d miss them abroad. I’d also need gluten-free pasta. 😆

There is just something about your videos that is so calming and enjoyable. I could watch you fold socks in your backyard and not complain! The views are gorgeous and the walk up and down those stairs a bit envious (it forces you to stay in shape!). Thanks for sharing!

I live in the USA and was raised in the 'South' and our tradition is eating Black Eyed peas on the New Year..to ward off bad luck...so, good luck in the year is the intention.

@@clarefriend1376 Exactly!!!! For us it was collard greens. Every collard green you ate on New Year’s Day, was one dollar more than you made last year. Same goes for black-eyed pea’s and coins. Cornbread was for good luck in the new year.

This video came up in my feed and I could not resist when I saw "pasta with lentils." This was a common winter dish in the house where I grew up and also a traditional Friday "cena," especially during Lent. My Salerno-born mother, long gone, always called it "pasta a lenticc," rather than "pasta con lenticchie" in proper Italian. She never put meat in this dish, saying it was unnecessary. Could not understand why until years later when I learned about the complimentary protein pairing of lentils with pasta. The food in your pot looked exactly like what she cooked, although she did not add potato, cheese and pepperoncino. Instead, she added Italian soffritto (mirepoix), onion, celery and carrot, including any leaves which came with the stalks. I remember her breaking spaghetti into small pieces if there was no ditalini in the cupboard. And there was always a drizzle of Italian olive oil over the dish. Thanks for the memories!!
