Excellent choice to mount a PSS. That's the best sealing! You will never more have any leakage, as long as it's only lubricated by water. Grease will damage the surfaces between the ceramics and the steel ring.

Look at that pretty new anchor, but even when they wrap them, you can always tell what they are. Really sorry to hear about the bad luck, seems at times that happens in multiples, and went through one of those periods of time recently myself, better now, and hope it is for you as well :) A tip; if you ever take that shaft coupling apart again, put a thin piece of rubber in between cut to fit the larger part, to act as a alignment helper and also to dampen vibration from the engine to the boat, it really works, try it, and it can just be a layer of inner tube or the like.
You may want to get yourself a couple of large wooden oars which are purpose built to last as opposed to rigging something up which is bound to fail. They can be strapped by rope where convenient to be an emeregency rudder. Should be mandatory on all fin rudder boats.
The coupling bolts are a puller with an extra three longer ones of the same diametre. Take off the retaining nut like you did then put a nut between the end of the shaft and the engine coupling put the coupling bolts back in and do them up and the nut will push the shaft away from the shaft coupling as do tighten them with some sharp hits with a ball peen hammer, keep tightening until the bolts run out of thread then remove them and place longer bolts and a bigger nut or two together between the shaft and the engine coupling and repeat. This type of coupling puller is far superior puller than a bearing puller and a ball peen hammer will not bend or damage the shaft as you are hitting the shaft coupling with it. For the next shaft extraction.

@ 8:04 - With nothing to do in a free moment while fixing a leaking propellor shaft and replacing a missing rudder, Oskar decided to do some repairs to Lisa's tummy. And an expert job he did too. No leaks. No squeaks. Sadly, the proof of his surgical skill is on a GoPro, 35 metres down in Davey Jones' locker. Oh well, there'll be another chance.
Haha, I/Lisa burned on the oven (happened a few times) and then I didn't want any sun or dirt on that. 😜 Let's hope there won't be any surgeries onboard! 😃
Usually you can find a hole on the side of the coupling that houses an allen grub nut and a key. Use an allen key wrench to remove it and the coupling will fall right off. *Do not force it off if there is a key or you will ruin the threads!* If it doesn't have that then DIY a puller plate from parts you can find at a scrapyard. I know the feeling. I lost my Sony Action Cam in July diving off of Delray Beach, FL. At least it will make someone happy, as the area is frequently dove.
I have real good luck with the shaft seal, nice job of installing, for safety please install the safety ring on shaft behind the SS ring . If the main ring slip you will have a bad day. Have you got one?
Next time put antiseeze on the shaft before putting the coupling back on. Also called Never antiseeze. Grease with aluminum in it keeps it from freezing up.

geez what a pain in the ass sailboats are if it can go wrong it will ive been sailing for 40yrs on my boat and ive never checked the rudder it hasnt gone wrong but just about everything else has so i just keep the boat at a mooring now and sip tea and read books
i would take a small buoy to locate me at all times, specially during the ascent because there may be incoming vessels in your direction and with a buoy they will at least give a few meters of clearance. it also allows for your partner to know, at all times, where you are in case you need assistance.
Yes, we did that too in the beginning but the boats did not seem to notice it.. At the same time Lisa also stood on foredeck with a dive flag but that did not seem to work either. Strange and a bit scary.☺️ That's when we decided to tie a rope from the boat to the bottom and then to Oskar instead. ☺️
I don't know the exact economics of it, but unless you have a really large subscriber base and each video gets a lot of views, then I'm under the impression you really don't make much money from it and its an annoyance to your viewers. If I recall correctly, there was a time a while back when RU-vid changed the rates for ads, and a lot of channels lost a lot of income. I'm sure you can find the details if you Google it. Some were calling it the adpocalypse because of the disastrous effect it had on their monetization of their content. That's why a lot of the channels are not so heavily focused on Patreon for people to support them.
We have some ads and don't want it to be to much but we really don't know how much it would help for the economy. Like Peter wrote maybe people will be annoyed? :) Anyhow, we think it's good if it's for free but if someone wants to support the production on Patreon we are of course more than happy.. 😀 That's a huge help and if we earn some money there we invest in camera gear etc. Also, it takes a lot of time to do the editing so if we get a few dollars per episode we really appreciate it. 😀
