INGREDIENTS:
FOR THE BATTER
Chick pea flour 1 Cup (16 tbs)
Semolina 1 1⁄2 Tablespoon
Citric acid 1⁄2 Teaspoon (Nimbu ke phool)
Salt To Taste
Sugar 1 1⁄2 Tablespoon
Turmeric powder 1 Pinch
Water 1 Cup (16 tbs)
Ginger paste 1 Teaspoon
Green chili paste 1 Teaspoon
Oil 2 Tablespoon
Eno fruit salt 1 1⁄2 Teaspoon
FOR THE TEMPERING
Oil 1 Tablespoon
Mustard seeds 1⁄2 Teaspoon
Asafoetida 1 Pinch
Sesame seeds 1⁄2 Teaspoon
Green chilies 2 Medium, chopped (Optional)
FOR THE GARNISH
Fresh cilantro 1 Tablespoon, chopped finely
Coconut 1 Tablespoon, grated
Directions
GETTING READY
1. Prepare the steamer by pouring water in it and allow it to boil.
2. Grease the tray (to go into the steamer) with cooking spray and set aside.
MAKING
To prepare the batter:
3. In a bowl, take chick pea flour (besan), semolina, citric acid, turmeric powder, salt and sugar. Blend all these dry ingredients together.
4. Add water gradually in small quantities while stirring to make a smooth lump free batter.
5. Add the ginger paste, green chili paste and oil. Mix well.
6. Add eno fruit salt and blend well to form a fluffy batter. Once eno is added you have to be quick in putting the batter for steaming.
7. Once well mixed, pour the batter into the greased tray and place the tray inside the steamer. Steam for about 20 to 25 minutes.
8. Meanwhile for the tempering, heat a small pan with oil, add mustard seeds, asafoetida, sesame seeds and green chilies. Take it off the heat.
9. Once the khaman is done, take the tray out of the steamer and pour the tempering over the surface and cut into pieces.
10. Garnish with freshly chopped cilantro leaves and grated coconut.
SERVING
11. Sprinkle some fine sev on the khaman and serve with mint and cilantro chutney along with green chilies.
TIPS
For a little added sweetness, dissolve 1/2 tablespoon of sugar in 4 tablespoons of water and drizzle all over the top of the khaman, before cutting into pieces.

Hi Bhavna, I am Aditi living in AZ. I was looking for some khaman receipes, and just came across your video. I tried it out immediately and believe me it was great. You won't believe how many times I have tried different khaman receipes, but was never happy with the result. But finally i could make amazing khaman. Finally !!!. In case if I have not commented on this recipe, here it goes. Simply superb. I experimented with some other flavouring. Like once adding some garam masala, another time, I had the red chilli and garlic paste, the Maharashtrian style. It was fun. Thank you for such beautiful simple recipes and straight instructions. Funtastic.

My wife tried it- came out well. Thanks, Bhavna ji. We used the pressure cooker without putting the 'weight' on. I like the 'steamer' pot that you are using. This is a variation of the 'idli-steamer' used in the South where I am from. Need to get it when I go next time to South India.

Hi bhavna i used 1cup of whole wheat flour with 1/4 cup of whole wheat rava instead of besan and sooji...juz followed your recipe...it came out very nice....god bless you my sister...

R Kumar I usually add more salt to keep them good but you can add warm oil or vinegar to keep fresh longer.

Yes, You can use cooker and lemon/lime juice or yogurt can be used in place of citric acid.

If you watch my video of Khichiya papadi lot in oven, you will get lot of ideas. Yes, I do cover with foil and with many hoes or cut in it to escape air out. And I would bake at around 400F

I haven't really tried with yogurt but I guess you can give it a try with 2 tbsp of sour yogurt and add just little less water than suggested.

YOu can use any variety of rawa. I use coarse one.

You don't have to have steamer exact like me. Any kind of pot can be used to steam with plate in it. I haven't tried in oven so I m not sure.

I never make with baking powder so not sure but for 1 cup I would use about 1 tsp of baking powder.

I just made it and it turned out good when I used eno. I just added 2 tbl sp yogurt. When I made using Baking soda instead of "ENO" it turned out awful. Thanks for posting.

Hi! I tried it with apple cider vinegar and baking soda and it was great. Very fluffy, but you have to add some more salt to balance out the sourness, that is all. Also, I added the mixture in the end so that the batter goes into the steamer immediately.

Hey bhavna...Thanks for the wonderful receipy and its so easy t make dish once u have explained. I never knew u can add ENO. Good experimenting. My mom makes readymade nylon dhokla mixture which has baking powder and ingredients just need t add water and steam it n tadka in the end.

Oil is needed otherwise, khaman will get stuck in your throat and alternatively, you can add yogurt for softness of Dhokla. But little oil will help to get nice texture.

You can add corn flour but you will need to add some kind of coarse ground flour to make khaman perfect.

Great recipe! Just a tip: To get lump-free batter instantly, sieve all dry ingredients like in cake batter.
