Without a doubt, the most requested recipe I had coming my way was Chicken & Dumplings. And seeing as I live with a Southerner who loves his Southern food, it's shocking it took this long to do it.
Now this Southern staple is something that always confused this Yankee by name. When I hear the word "dumpling" I think of Chinese dumplings filled with meat (and it makes my tummy sing). I am the self-proclaimed dumpling king and can eat them every single day.
But SOUTHERN-style dumplings are more on a spectrum. Some are fluffy like matzo balls but the most common is a ribbon-like thick noodle that practically melts in your mouth - like a creamy, Southern-style Chicken Noodle Soup. And that is the exact type of Chicken & Dumplings I wanted to make.
It took me a few attempts to work out the proper consistency for the dumplings, but a few bags of flour and a bunch of butter later, I can officially say I that I've created a version of this classic dish to make Scarlett O'Hara forget her manners and lick her bowl clean and NEVER go hungry again!

I just made this recipe tonight and felt the need, no URGE, to write a review. My husband has not stopped raving about how delicious this turned out and how flavourful the broth is. He is hard to please when it comes to soups/stews as they "aren't his thing" but he told me this is one of the BEST soups he's ever had! Thanks Jeffrey, we'll be making this for many years to come.

My mom used to make chicken and dumplings on cold rainy days. My father would melt when he ate them. Fond memories around the dinner table. Thanks, mom.

I made this and it was delicious. I browned the skin first and used a bone broth for some added depth and umami. Cooked the veggies in the schmaltz left in the pot and deglaze with the broth, it really helped make a more complex flavor. Thanks for all the recipes!

I married into a Southern family (KY) and no one made their dumplings the same. These dumplings look like thin "sliders". I love them all, especially the Midwest Bisquick version my Mom made.

Chicken and slicks. Sliders are a whole different thing in KY. Lol. My husband and I are both born and raised in KY and his family made the Bisquick style as well. I prefer my grandmother's slicks, he prefers his mother's Bisquick. We are in a lifelong impasse over chicken and dumplin's.

My family is from Eastern Shore MD, and this is exactly the way my grandma and aunties made theirs! We NEVER made Bisquick type dropped dumplings. We called them biscuits and chicken soup. LOL... I'm the only one in my family who has the old skool C & D talent, and will be making a pot for my family on Thanksgiving. GREAT JOB!

Just made the other night. It was a HUGE hit with my family. Husband couldn’t get enough and my two daughters (toddlers) I struggle to get to eat, knocked out two bowls each. They keep requesting since. Thank you!!! It was so simple and sooo delicious!!

It’s hilarious. Truly. I state in the video right up front there are so many variations of Chicken & Dumplings. To those who say these aren’t dumplings, you just haven’t had this style yet and need to expand your culinary minds a bit. This style is enormously popular in many Southern regions and I know this being with an Alabamian. Calm down, take a deep breath and try it because you have no idea what you’re missing. It’s like a butter ribbon in your mouth. I’ll simply have matzo balls if I want them fluffy style. This is simply my version of this classic dish and I am so proud to share it with you 😘

You did good, Jeff. I'm from Texas, and your version is totally different than my mom's. Unfortunately, her recipe died with her. I'm going to give yours a shot. I married a New York girl, and this looks like a good compromise. Thanks for everything you do!

I'm in KY and you will find both types here. I like both as well, although I've never used garlic in mine that might be a northern thing.

To each his own. My mom always made dumplings with Bisquick. They were fluffy and light. My mother in law made them as you have shown. They were one of our favorite dishes, we called them "sinkers"

These flat dumplings are seen on menus in the southeastern US. Sometimes prepared as seen in Jeff 's video but may also have a hint of poultry seasoning added.

I’m 80 years old from Alabama and my Mama made wonderful chicken and dumplings and my friend you pretty much nailed it! All the way through the video I keep thinking this guy is going to mess up these dumplings. Nope you had it right on target, the dough was made perfect, rolled out thin so that after cooking the turn about 1/4 inch and cooked just right. My Mom never used carrots in the main dish, she severed fresh English peas as a side dish. There were differences, she didn’t use a thickener but her dumplings were coated in a lot more floor than yours and the result was the same, she never used cream in her recipe but I believe yours had a creamy rich texture I would have loved. I am amazed how well you did. I have an Instant pot and you have inspired me to try some chicken and dumpling’s. The big thing is - you made it seem so easy. There are a lot of old southern women who would not believe a young Jewish man from New York City would be able to do it!

I made this yesterday and it was so delicious. I made my own chicken stock with the bones of a rotisserie chicken and added the meat from the chicken. I used a delicious cherry wine in place of the Sherry. So delicious.

Dumplings in all forms are abundant in most countries. My family is Pennsylvania Dutch and my Nana rolled out her own dough much like these shown and called the dish, Chicken pot pie. We all loved it and I add some sherry and a bit of terragon for extra wonderfullness in mine. I also enjoy the bisquick type which is really much different from a noodle version. I’m a true Appalachian, from southeastern KY. I grew up eating chicken n dumplins that are fat and fluffy😋. I don’t consider the dish to be a soup, sauce, or stew. Chicken n dumplins are in a category of their own. My Mamaw always added some yellow food coloring to hers bc homemade “in the old days” used a fat hen so the fat cooked out into the broth making the color rich and yellow and the taste rich and delicious 😋 My Mamaw also made fruit dumplins using one of these berries; blackberry, raspberry, and strawberry. Mamaw’s dumplins were sweet fat and fluffy and boiled in the sweetened berries and juices. Omgoodness, you don’t know what you’re missing!! Lots of southerners make delicious cobblers BUT you’ve got to try the dumplins 🥰

I like to cook for family and friends, and I've made several of your instant pot recipes which I thoroughly enjoyed. So I decicided to give your chicken & dumplings a shot. I followed your recipie to the letter and gave it to my large family. I gotta tell you that this chicken & dumplings was "SLAMMIN"!! My entire family couldn't stop eating it! They couldn't stop raving about how good this recipie was and demanded to make sure that the very next time I make it again that they all get invited to dinner! Made it tonight with slight variations (white meat, no sherry and just a little wetter dumpling batter and no celery leaves). Outstanding, and I might add that this was my first attempt at chicken and dumplings. Kudos to you sir.

Well here in West "By God" Virginia, we just call that Chicken noodle soup.... Dumplings are dropped in by hand and where is the egg in the dumplings. We just tear apart the dough and toss them in aka Dumpling part, what he did was make a homemade noodle. Now don't get me wrong, I will try his recipe out as I love homemade noodles myself, but that is not Dumplings.

I made these and did my own spin a little bit. My friend who's in her 80's said it was the best chicken and dumplings she's ever had and reminds her of the old way of making them (compared to newer recipes). definitely a win!

Thanks for sharing the dumpling recipe, my Mom was raised as a Mennonite and this was what they called “pot pie” it was always cooked in chicken or beef. She was always trying to teach me the home cooked recipes of our ancestors but being young and dumb I wanted nothing to do with it. She is now gone and I made this dumpling, and it is exactly like my Moms. Thank you so much! Much love to you❤️❤️❤️

I think you did a Fantastic job of making this!! I'm an Oklahoma girl and grew up eating chicken and dumplings. It is a treat now for my own family. Kids come from everywhere when they hear I'm making chicken and dumplings! As to whether it's a soup or a sauce...hmm..it's just chicken and dumplings! No explanation needed..just good old fashioned comfort food!

this is my fav kind of chicken and dumplings and yours is so good ty when i was young i had this soup and had such a hard time finding this type of dumpling when i got older to make myself finally my mother in law said pot pie topping and i found it lol it has so many different names so glad to see this on youtube cause its the best i love chewy dumplings over the biscuits that suck up the whole soup.

grandma used a drinking glass and cut circles. and kind of overlapped them a bit on top in a dutch oven. put it out on the wood stove for a while. We could smell it through the whole house. Mmmmmmm great on a cold winter day after playing in the snow till our bones ached.

Jeffery, I bought your book not long ago and I use it almost every time I cook. I watch the coinciding video to make sure I get the end product to what it needs to be. I think the next time I make this dish I'm going to leave out the heavy cream at the end because I like the look better without it. I love this channel! Keep posting, it's a blessing!

I'm originally from North Carolina and I've been waiting for you to post a chicken and dumplings recipe. How could you not with Richard by your side? And... yes!!! In my corner of the Southern world, dumplings are in strips, not fluffy little balls. Thank you! I know it varies depending on the cook and the region, but the strips are what I grew up with and the only kind my totally Southern mama made. Your recipe came close to the one I have, but we never added any vegetables or cream. I think those would be a great addition. Also, in our family recipe, the dumplings go in last, while the chicken and broth are simmering. Then the heat is turned to low, the pot is covered, and no peeking or stirring for 10 to 15 minutes. I've never considered it a soup or stew - it's simply chicken and dumplings and should be able to hold its own as a side on a plate with minimal oozing of broth/sauce/gravy. Or, it can be a main dish - it's delightful! It's chicken and dumplings! Love your channel, love you and Richard, and wish you the best in your new home. Enjoy!

@@phil2u48 I've never heard it referred to as "chicken and pastry." I'm from Mecklenburg County, Charlotte area, and the closest I ever came to spending time in the "down east" region was a few days on Ocracoke. New one for me!

@@phil2u48 I have family in NC from Robeson County that call it Chicken and pastry, and family from Richmond county that call it Chicken and Dumplings, but it's made essentially the same way with large square-ish cuts of dough. And some people make it soupier than others. Regardless, it's wonderful!

I am from Texas and I have never seen a dumpling that looks like a noodle and this is not to say that your recipe is not tasty, it just looks different from my grandmothers. My grandmother would make the dumpling dough take a teaspoon and drop the dough into the chicken and broth to make a more fluffy tasty dumpling. It's fun to see the different ways of cooking the same dish. Thank you.

Some time when you make your chicken and dumplings and you don't want to roll your dumplings, bring chicken & broth to a boil and then use the two spoons method. Scoop your tacky dumpling mix out and then just drop it into the chicken & broth. Do the entire batch in the pot and cook for 15 mins with lid on. Take lib off and carefully stir. Then let cook another 5 mins for a total of 20 mins. Once you try these dumplings you will never want to go back to the strip noodles.

This is exactly the dumpling they use down here. Being a Northerner I was a little confused when the people would talk about chicken& dumplings. But this flat dumpling is what they mean. Looks delicious!

I add half a teaspoon of italian seasoning to the dumpling mix and roll them into small balls. Great recipe!

I've been IP'ing for a couple of years now. I have never used a whole chicken for broth. Anxious to try that technique and see how it differs from just the boneless skinless breast! Also, I was born and raised in Dallas, Tx. I have always cheated on my dumplings and used the canned biscuits. I can't wait to try your dumpling recipe. My memaw used to make flat dumplings. I have had both the drop dumplings and the flat. My favorite is flat and I like a bunch of them. I am thinking I am going to double the dumpling part of this recipe. Also, to all of the comments about authenticity with veggies or no veggies. It just depends on what part of the south. Chicken and dumplings is like cornbread, iced tea and greens! There are so many variations and they are all born in the south. By the way, I put sugar in my cornbread and greens but not my tea LOL. I have been using gluten free gnocchi (potato) in place of a traditional dumpling because my husband is gluten intolerant and gluten free dumplings are just not that great. The gnocchi works great

Michele Of The Oaks Hi Michele, Gnocchi are potato or flour oval pasta that look like mini pillows with ridges on one side. Essentially, they are Italian dumplings.

Lauren Cavanagh I first discovered gnocchi at Costco and instantly made the connection. Super genius. Works well, no clean up and helps thicken the chicken broth.

Howdy PLC, I'd have to say the 'broth' is more of a stew than a soup. It becomes a stew since you 'stewed' the veggies, chicken, and ultimately the dumplings in the chicken broth and thickened it at the end with cream. So, technically you're eating a Chicken and Dumpling stew, which us southerners have shorthanded to "Chicken n' Dumplins".

I love making chicken and dumplings. I've also used your reciepe for chicken soup. It's sp delicious 😋. My little nephew who's 4 years old. Helped me make the dumplings. When it was done. He said Auntie Emily something smells so good. 💓

My mom made matzo style dumplings and called them dumplings. My grandmother made your style and called them noodles,but she used eggs in hers. Regardless, they were both delicious and each had its distinct taste. I miss them both.

My mom used to make our dumplings with bisquick. She was a lazy cook, hated to cook. But those dumplings were great. They had just a touch of sweetness. Havent tasted anything like them since

Great job! Not exactly like my mother-in-laws, but very good. I use rosemary, thyme, pepper and salt in my broth. I also add herbs to my dumplings. I add an egg to my dumplings which makes them more noodle like. I never need to thicken the broth with flour. There is plenty of flour on the dumplings that thickens the broth. I often use two chicken breasts with the skin on to provide the rich broth for the soup. Not bad for a Yankee :-).

I’m from the south and I remember my mom and grandma making this. They would even kill the chicken and clean it themselves. Nothing like that fresh taste. Delicious!

Here in North Carolina we call it "Chicken Pastry." It is a "sauce" or "gravy." Both fit the recipe. Well done guys.

It looks delicious!!! I'm from PA; we call this recipe chicken potpie. We sometimes a little peas or corn to this recipe. In my part of PA, chicken and dumplings are a lot more like what Chef John on the Food Wishes does.

OMG! Jeffrey, I have been WAITING for you to do a chicken & dumpling recipe...or, as they call it in the southeastern part of North Carolina where I come from, a "chicken & pastry" recipe. I wouldn't call it a soup or a stew, it is kind of in a category all its own. Richard is completely right, everyone makes theirs differently. In my region of the South, it was made with ONLY chicken, salt & pepper, broth, and "pastry." No veggies or dairy in it at all...except, some people put a bit of onion in there for added flavor, but that is all. The "pastry" we always rolled out were a bit thinner than yours and were about 4 inches long, but I have made it with thicker dumplings too, and I like either one. Chicken and pastry was almost always a Sunday dinner (and by that, I mean "lunch") meal. And it is considered a delicacy where I come from. Anyway, your recipe looks delicious and I totally agree with you, MAKE YOUR OWN DUMPLINGS ("pastry"). It is totally worth it. Thanks for once again taking it to the next level, Jeffrey!

I learned my version from my Minnesotan mom so mine was more like this with veggies but we did the homemade or when lazy bisquick drop biscuits, soft & wet on the bottom & fluffy & steamed after simmering covered. I'm in NC now & mostly whatcI find is your version of chicken & pastry. Both are good👍

Oh yes! My friends from Cartaret call it "chicken and pastry." It may be because a "dumpling" has leavening and rises like a biscuit on top of the stew.

Looks great! Can’t wait to try this recipe. My mother (and both grandmothers), all from Georgia with Scot, English, and Irish ancestry, made their dumplings in this shape. The main difference was that to make the actual dumplings, mom just took some of the chicken broth out of the pot, mixed with the flour, and rolled them out. That’s it. Thanks. I’m late to the party; just discovered you, got your books. Made your pot roast last week-it was phenomenal!

I love my chicken and dumplings. For me, once it's ready, the only thing needed is more black pepper. By the way, the Koreans have their own take on this dish. There's no veggies in it except chopped green onion near the end of cooking, and the "dumplings" are made with rice flour. They make a roll of the dumplings, press down on it a bit to make the roll into an oval, then slice the roll diagonally to get individual dumplings about 3/16" thick. It, too, is a thick soup or stew, just like our traditional southern chicken and dumplings. For a southern boy who was stuck 8000 miles from home, they tasted really good.

This was delicious, I didn’t make the dumplings but served it with potatoes and it went down a treat! I tasted the stock after taking chicken out it was so fresh! I am in the UK so some things I don’t have but still great. Because it was so fresh it would make a delicious soup/broth leaving out cornflour and maybe cream . Have leftovers for tomorrow might try it with pasta. Have been looking for some flavourful nutritious non spicy meals so this is great - thank you!!

We are from PA and my grandma made this but we called it chicken putt(pot) pie! Delicious! We were kinda close to Amish country, & I think that's where it came from.

I'm sure this is delicious and I intend to make it. I wouldn't use dark meat as I don't eat it. I usually make dumplings with a spoon so they are bigger than yours and thicker as well. Instead of making a formed dough I just made my own little balls like how my mom would usually make doughboys back home and that turned out fine instead of the more americanized "strips" I've got an 8qt and doubled the recipe, the pot was cleaned before the next morning lol. Thanks friend!

Congratulations! For a yank you did good! Critical was the thin (1/8") rolled dumpling. In the south we call these "slick" dumplings.

My first recipe I ever made in the Instantpot...(2nd version) was chicken and dumplings. But my recipe was more of a biscuit style with parmesan added and the vegetables were carrots, celery, onion, And corn. Still the basic sauce. I gave to try this one.

I fixed this just like uou showed us. Oh man this is the best chicken and dumplings ever! I did double the recipe because of our large family. I used the 6 cups with the veggies and chicken in the pressure cooker and then had a pot on the stove with another 6 cups of broth, garlic and more bay leaves and then combined everything when cooker got done. The dough had a great butter smell to it as I cut the dumplings. This was a great dish and a number 1 hit! Our new favorite dish. Will have to try this with matzah balls!!

In the seasoning, I would add a dash (or two) of cayenne and black and white pepper. Thanks for the nice video, I really feel the love you put into it. I got my instant pot (The duo crisp model) yesterday. I'm going to do some shopping later this week. I definitely will ask my butcher to cut up a chicken for me so that I can try out this simple (but amazing) recipe! Although I find watching your videos instructive, sometimes I like to have a cookbook with nice illustrations open in front of me. I've looked on Amazon, but haven't found anything. Until I see one written by YOU, can you recommend anything? Thanks for all that you do. :-)

I made this dish yesterday trying to clear out some chicken in my freezer and hubby said it was "the best thing to come out of that pot yet" lol. I had one bowl and he LITERALLY ate the rest. gone!

I've never liked chicken and dumplings because of the ones I've tried, I've always hated the texture/density of the dumplings. I think this is one I would actually like because the dumplings are big and thick. Definitely trying this! You're awesome Jeff!

I am used to pillow-like drop dumplings maybe I should say cloud-like.and if dropped right in broth they thicken it. I used them with beef shanks -- kind of a stew. These sound good and are more work but will try them
