Ingredient List:

1 whole chicken cut into small pieces (OR) 3 lbs of Chicken drumsticks and thighs
3 cups of Basmati Rice(amzn.to/2GJdQki) soaked in water, for around 30 mins
2 cups of fried onions
1 bunch of mint leaves, chopped
1 bunch of coriander leaves, chopped
1 lime/lemon
5/6 green/thai chilies,slit (skip this if you dont want it to be spicy)
1 cup of Yogurt/curd (PLEASE DILUTE WITH WATER.)
3 tablespoons of oil
3 tablespoons of red chili powder. (amzn.to/2CIqoFW)
1 teaspoon of Turmeric powder (amzn.to/2DJ0B2J)
2 tablespoon of Cumin powder (amzn.to/2BaO8lc)
2 tablespoons of Coriander powder (amzn.to/2DI1ok9)
1 tablespoon of Garam Masala powder (amzn.to/2mJW7AS)
2 tablespoons of Ginger-Garlic paste(amzn.to/2EPqME1)
Salt, as per taste

Directions:

Step 1 : Marinate the chicken.
In a large bowl, marinate the chicken, first, by adding all the garam masala spices.
Add the ginger garlic paste, mint leaves, coriander powder, green chilies and the fried onions.
Next add the spices: red chilli powder, turmeric, cumin powder, coriander powder, garam masala powder, and salt.
Add the yogurt and the oil, and squeeze some fresh lime juice on top.
Mix them really well, and keep it in the fridge for 30 minutes.
Now your chicken biryani base mix is ready.
Step 2. Saute the base mix.
Turn on the IP, and switch to Sauté mode and adjust the temperature to ‘Low’. (Setting it 'low' ensures the bottom doesn't get burnt. )
Add the marinated chicken into the IP, and let it sauté for 5 minutes. Gentle stir occasionally to brown the meat.If there is any burnt food stuck to the bottom, turn off saute mode and scrape out the burnt food. This will greatly reduce the chances of seeing the 'BURN' sign.
Step 3: Cook the chicken in Venting mode.
Close the lid, switch to ‘Manual’ mode, adjust the time to 10 minutes and make sure the whistle is in VENTING Mode.
After 10 minutes, carefully open the lid. At this point, the chicken will be “half cooked”.
Step 4: Add the rice to the base mix.
Add the rice, and gently spread the rice around evenly.
For 3 cups of rice, add 3 cups of water.
Close the lid, in manual mode, set to 6 minutes, and make sure the whistle is in SEALING mode.
Step 5 : NPR for 6 minutes.
Let the pressure release naturally for 6 minutes. Release rest of the pressure using Quick Release.
Make sure the safety valve has dropped before opening the lid.
Serve hot, alongside “Raita“( • Two Simple Raitas for ... ) and “Mirchi ka Salan”
Garnish with onions/cucumbers/tomatoes.

A little about 'Biryani':
Biryani is a layered rice and meat dish, cooked in aromatic spices.Popular choices of meat are chicken and goat.There are over 365 different varieties of biryani in the world. Biryani is very popular in India and almost every state has its regional method of making biryani.The Biryani made in this video is the "Hyderabadi Chicken Biryani"
The history of Biryani is a matter of great debate in India.Some say it were introduced by the Mughals, some think its the Persians, some point to the Arabs and some say Biryani was invented in india, but it was just called Pulav. Some food historians say Biryani was invented in the 13th century, by construction workers in Lucknow, Uttar Pradesh and the King of the time loved the smell so much he ordered it to prepared in the royal kitchens as well. Ethymologists have suggested that the name biryani is persian as the persian word 'beryan' means 'to fry'. Other food historians say Biryani was invented by Indian armies, who didn’t have too many utensils, and wanted to cook something simple in a single pot. They sure would have loved the Instant Pot.

When In saute mode, put in all the spices and roast them in butter and then put the marinaded chicken and rather than closing it immediately, saute it for a couple of minutes and then close it in manual mode for 7 minutes without putting the whistle in venting mode. And follow the rest of the steps in video as is,That comes out as a Hyderabadi Biryani

TIPS TO AVOID 'BURN': 1. Dilute the yogurt before adding. 2. Make sure to brown the meat! Stir frequently! 3. Before pressure cooking make sure to scrape the liner's center hard...this is where the sensor is. 4. Make sure there is enough water before pressure cooking. The most common cause of BURN is lack of moisture. Notes: 1.I have added a List of the Ingredients and the Steps in the Video's description section. Please check it out if you need a written recipe! 2.Please feel free to customize to your taste by adjusting spice levels. 3.For acquiring spices, use google maps to find "indian" or "indopak" grocery stores. These stores usually contain everything needed for making indian/pakistani/eastern food and the spices/powders are usually inexpensive compared to stores like Target/H.E.B/etc. I hope these tips help! I just bought an instant pot. I tried this recipe but it got burnt at every level. I did it with 2 cups of rice. I added 2.5 cups of water. The display just shows as ON and then BURN even though I set the timer. I used a 3qt instant pot. Can you tell me what I did wrong?

During saute mode there might be food stuck at the bottom try scraping it out before setting the timer. While in saute mode if you see the particles stick to the bottom you can adjust saute mode to low for a while and then adjust it back to medium. Hope this helps and happy cooking :)

Love love your recipe. Made it tonight and got the Burn in the first IP cooking of the chicken. We scraped the bottom added water turned it on and second Burn. This time we did the same thing. Step 1 complete we add the rice and water scraping the bottom, BURN again. Long story short I ended up putting it on sauté with the steamer lid and it came out great.

Madam I tried your recipe yesterday, and followed your timings exactly. Biryani was perfect! Thank you. Only difference is that I used 250 ml cups for the rice (instead of the 160 ml instant pot cup), so the amount of chicken was insufficient; I will increase the chicken to 3.5 lbs for 750 ml of rice the next time. Also, I used 2 TBSP oil and 1 TBSP ghee.

I usually make chicken yakhni pulao and it comes out pretty good. This recipe kicks it way up a notch! The timing worked out awesome. I had all of the ingredients except for the star anise, and substituted some all spice (dalchini) . Thank you for posting. By the way the timing on the different stages of cooking worked out just fine.

Great recipe! In terms of flavor, it was spot on. I used 2 table spoons of red chilly powder and slit 4 green chillies and it was perfect ( I order spice level medium) at restaurants. A couple of things: I have an instant pot Duo. The timer will not start unless the pressure is built up on Pressure Cook mode. I mistimed it and it was a little undercooked. I will have to microwave the chicken separately upon reheating for a little while longer to correct for this. Please let us know if there was any delay between 5:03 and 5:04 (the start of the time lapse video) to help us time this step correctly. The rice was a little on the softer side... I'm guessing ~4 minutes would be enough as the residual heat ends up further cooking the rice. Alternatively, take out the rice immediately, lay it as flat as possible and place it under a fan

Your recipe is very nice,I tried it but the problem came when you said to put the marinated chicken on venting mode.And my whole chicken almost got burnt.It got stuck to the pot and all blackened at bottom.I would suggest that you make the change in the recipe from “Venting mode to Sealing “mode so that Chicken can cook properly and not get burnt.Many people like me who are first time users of ur recipe and method of cooking on the channel would get distracted.I was very upset at that time but I realized that you are simply sharing you experience . Thank you

Great video! Like many of the reviewers, I ended up with a burn warning on the instant pot. I ended up having to constantly open the instant pot and scrape the bottom to temporarily stop the warning. The result tasted good, but took a lot longer.

One suggestion though, since the new cookers don’t have “Manual” button, can you please add a statement what to use for new cookers? I googled and figured out pressure cook option is the new name, but for everyone’s sake..

Thank you for confirming that the old "Manual" mode is now the "pressure cook" mode. While cooking the chicken (before adding the rice), my timer would not start when in venting mode. After I changed it to sealing mode, the timer started. Did you have to do the same? I know you'r comment was more than a year ago but I'm hoping you have used the recipe multiple times since and can answer my question 😃

Thanks for the video. I have been making biryani well for a long time. So I wanted to try this method using IP. I used boneless chicken thighs. Cooking the chicken in vented steam mode was too much. After both round of cooking chicken was way over cooked. Next time I would just saute and let it simmer for a little while and then cook the rice on top as per direction. Also I sauteed the rice with whole spices in ghee before I added to the pot and did the final cooking. Came out great except for the over cooked chicken.

Nice. You should definetly experiment with the recipe as per your preference. I think its very important to brown the chicken as thats where the flavor come from.As far as the cooking times are concerned, they have to be adjusted as per the quantity and type of meat. I refrain from using ghee, as ghee tends to burn the bottom.Thanks for the comment!

Nice recipe, One small suggestion, Adding oil in the saute mode first with Bay leaves, Cardamom, Cloves and adding all the powders before adding chicken will give more authentic taste, Regards

Ian Conroy you’ll find many of these spices at Whole Foods and Trader Joe’s. Also there are a lot of Indian/Pakistani stores which sell these spices.

It’s a great recipe! I am beginner and still able to make great Biryani following this. The most amazing part - rice was not sticky at all and each grain was separate and perfectly cooked. Thank you for sharing.

Hi Sandhya, thank you for your wonderful recipes. I tried the Biryani but when I placed the chicken for 10 minutes on venting mode, it went on for more than half an hour without getting to the countdown. I somehow didn't find that right and cancelled it. When I checked it had a burnt bottom... What do you think I did wrong. Many thanks

I tried this approach, taste was good. However instant pot ultra gave burn message even before adding rice so I was cleaning the burn then manual . Result is rice was sticky instead of typical biryani. How to avoid burn n also stickiness. May be I have added more water to clean burn then start/stop

Hi in the other video of bone less chicken Biryani, for the rice u have added different amount of water... ??? In this it’s different, can u tell me exactly for 3cups of basmathi, how many cups of water to add in instant pot.. does it change with boneless and whole chicken ???

Ur cooking method was good ... but 6 mins for rice was not needed i feel.. because just 4 min is enough for basmathi rice and chicken was already 50% cooked. I usually sauté chicken and masala , add rice and manually 4 mins .. it's come perfect 😊

We keep running into the bottom catching. Our burn notice popped up twice so we couldn’t leave it with the lid. We followed he recipe 100%. We are using a 8qt but still sautéd the chicken for 5 the added the lib on venting for 10 min, 3 mins in we had the burn notice added some water deglazed it then just cooked it with the lid off until it was 50% done then added the rice then water, put on the lid and turned it to sealing and even before the count down started we got the burn notice again and had to take the lid off. We just had to take the lid off and cook it. Any tips would be great :) we saved it just had to mix it and watch it 🤷🏼‍♀️. My husbands from Hyd. ♥️♥️♥️ We miss India but you’re recipes have helped me bring a little bit of home to him.

The best ways around 'Burn' are to deglaze/Scrape the liner throughly and making sure there is enough water for the IP to build pressure, especially if you have thick liquids in the IP like yogurt or marinara sauce. If you feel your IP is very sensitive, skip adding yogurt and alternate with buttermilk. Also try to make the recipe on a stovetop once before trying pressurecooking. I hope these tips help.

Just tried this. It was my first attempt at making biryani and I’m very new to cooking in general. I think this recipe was a good first attempt for me but I felt I didn’t add enough salt. I put in 1.5 tsp to the chicken marinade. Any recommendations on how much salt to add and should we only add salt to the chicken marinade? Or also add salt when adding rice and water? And any recommendations to ensure every grain of the rice is separated rather than sticking together?

I had trouble with burn message. I think because drumstick and thighs in us grocery stores are too large and need to be cut into smaller pieces? I also think the yogurt I used was too thick causing the paste to burn. I will try again by first mixing the dry spices with the yogurt to make a paste then coating it with the oil. I also noticed pressure cooking the chicken doesn’t call for any water? To avoid the burn message it might need some. I’m using a 6qt ultra.

saqer1 you need to whisk the yogurt and if you think the chicken and gravy is too thick please sauté it at low temperatures ... and before adding rice to it scrape the bottom and mix it once it should avoid burn signal ... all the best

My rice always gets burnt or mushy. When you put the chicken in for 10 mins thats quite long, my IP seems to cook it in 3 mins pressure. Could you suggest on the timing part

2nd Attempt : BURN again. I added 2 cups of water before manual mode. Still it got burnt. I have no clue why. I use 3Qt Instant pot Duo plus mini. Any suggestions are appreciated.

I haven’t tried it yet, but like the way u have given details on the which buttons to press on the Pot, it’s really good for all the beginners, especially for ones like me who have never used a Smart Pot,, my only question is I have a NutriCook Smart Pot, so can I follow same steps of timing etc???

I study abroad and it’s really hard to find authentic indian food (that too at a reasonable price 😅). Biryanis here are way too overpriced and really bland. I just made biryani using this recepie and i must say it was phenominal! Going to be making this every friday for sure 🤙🏽

Question: Instead of pressure cooking chicken for 10 minss and again with the rice for 5 minutes, why can't I just pressure cook the chicken 1 time together with the rice using the "rice" setting. This usually cooks the rice for 12 minutes, which should be enough for the chicken no? Im using aged basmati so it takes longer to cook anyways

Hello. I have got new instant pot of 6 qt and when I am following this recipe, in the manual mode after setting it to 10 min for the chicken to cook, I don’t see countdown of minutes in the display. I can just see ‘On’ all the time. Is that normal ? Because in your video, I can see the countdown

Followed to step 3. My duo does not have manual button. I assume pressure one is the same thing. In venting mode, got burn signal with burn at bottom. Why did I get burn?

How did your manage to get the timer to work on venting mode when you use pressure cook/manual? The timer doesn't start unless pressure builds up.. And that would not happen in venting mode. Am I missing something here?

I have a question. After cooking in saute mode, I think you say "make sure the whistle is in venting mode" and set it with manual for 10 minutes. After that you add the drained rice, you cook on manual for 6 minutes with the vent sealed it, followed by a quick release. Is this correct?

Having made my first Indian themed dish (your video for instant pot curry. It was amazing by the way) this weekend, I have to know what is the difference between "cumin powder" and "coriander powder?" I'll also have to admit that I felt like a fool when I went to the health food store looking for coriander leaves and the guy told me that was cilantro.

I ignored the instructions to leave the vent knob in the vent position when cooking the chicken. The vent position is only for releasing pressure not, cooking, Chicken turned out fine, partially cooked as expected in the seal position with not one "Burn" warning. . I thought 6 minutes was a bit much for 3 cups of rice, so reduced it to 5 minutes and the rice was cooked perfectly. The instructions for the masala spices need clarification. It says two to three each but surely you don't mean two to three each of the shahi jeera (cumin seeds). I added a teaspoon but maybe I should have added a tablespoon. I hope you review this recipe and clear up the confusion about vent vs seal and the quantity of the ingredients.
