Recipe follows: Instant Pot Chicken Shawarma - Flo Lum MARINADE Place into a gal size Zip-Loc bag: 2 lemons juiced (for 1/4 c lemon juice) 4 cloves garlic - crushed or pressed 2 t paprika 2 t cumin 1/2 t turmeric pinch of cinnamon pinch of crushed chili flakes 1 t salt ground pepper to taste 1/2 c olive oil Mix. Add 3-4 lbs. of chicken skinless thighs and mix to coat. Place in fridge for a couple of hours. Into Instant Pot: 1 onion quartered and entire contents from marinade bag Cover with lid . Press Manual for 8 min. HUMMUS Into a small sauce pot: 1 can chickpeas with liquid 3 cloves garlic Heat to a boil then simmer for 5 min. Place pot contents into a food processor and add: 2 T lemon juice (about 1/2 a lemon) 1/2 c tahini (sesame paste) 3/4 t salt Turn on to Blend. Drizzle in 2 T olive oil while blending till creamy Place hummus into a bowl. (The longer it can sit, the more flavors blend.) Can drizzle small amount of olive oil on top. Pinch of paprika WHITE SAUCE Into a bowl: 1/4 c tahini 2-3 T water 1 clove garlic pressed (can add more) 1 1/2 T lemon juice 2 pinches salt Mix well When IP is done, you can place chicken on a sheet pan under broiler, put on grill, or pan fry for short time....or just eat out of pot. Plate, drizzle with white sauce, and top with some chopped parsley with a side of hummus.
We made your version of the chicken & it turned out so good. We assembled it with homemade hummus to spread on pita bread & then added tomato, lettuce & cucumbers. Yum. Thanks! 😊

The one time I went, believe it or not it was a handmade burger...it was to die for! We are pretty spoiled for good shawarma in Ottawa but I could see making this at the cottage when I have a huge gang to feed. Your recipes save me, Flo! I now have chicken thighs marinating in the fridge for tonight ( thighs probably not ideal, but what can I say, they were deboned and a bargain....) and this will save us as we are having a heat wave here! Everything is getting made in the Instant Pot (chickpeas, rice etc) and then I will brown up the thighs quickly on the BBQ. Always love your presentation and as someone who makes instructional videos I can tell you your pacing is just right!
Looks delicious. That would make a great 'dump' recipe to have in the freezer ( not that I'm ever organised enough to do that ). I love hummus but have never had any success with homemade. I'd like to try your way! Really enjoy the banter between you and your husband.
For a more authentic shawarma I suggest you add cardamom and lemon zest to the spice mix, and pair chicken shawarma with garlic mayo and pickles. Wrap it in a sandwish and toast.
Have you ever added any veggies (roasted) tour hummus? Roasted red peppers or roasted carrots are both relish. I am definitely going to cook my chickpeas first next time l make it, maybe tomorrow as l am anxious to try it your way. I love your videos & l just found you tonight. I made it today for supper. I used your recipe for the Chicken Shawarma. I used the IP and only cooked it for 4 minutes. And finished off on the grill. Was great. I didn't make the Hummus as my wife doesn't like it. So I made a seasoned rice and cooked down and thickened the sauce made in the IP. I served it over a seasoned rice and along with some pita that I heated on the grill. I couldn't help myself as I made some Taziki sauce to go with it as well. Thanks

Thanks, Kellie! I know, right? We went back a second time for the shawarma during the 1 week we were in Paris. It was one of those order from a window on the street places. Way better than the expensive sit down restaurant where we had duck, steak and frites and fish. Although we did enjoy the razor clams. I think about those a lot too! 😉
I made this last week and it was GREAT! I put the chicken under the broiler for a couple of minutes, but I think we could just eat out of the pot. Made good leftovers as well.

I made this tonight using chicken breasts that I cut in half vertically and cooked for 9 minutes. It was an easy, tasty recipe! I wish there was a print recipe button to push.

This looks absolutely amazing! As an American, I lived in the Middle East for 10 years. The shawarma's they served were on pita bread, with chicken, french fries and tahini sauce. I'm so missing them and your recipe is the closest I've seen to what they made in Saudi Arabia (made by Egyptians). Thanks for sharing this recipe. :)
