I do flan in my instapot with half of the ingredients although I use 1 can of condensed and 1 can of evaporated milk. Love the instapot. With my Ultra model, I only need to cook the flan for about 15min.. I used to have a Wolfgang Puck pressure cooker and flan was done perfectly at around 15min as well.

The beans were yummy, but I ended up adding olives, cumin and bay leaves to add some of the traditional flavors my family always used in their beans. I made it the day before noche buena and by the next day the beans had thickened up (I added a little water) and they were absolutely delish!!!!! Thanks so much! The mini spatulas are great for scrapping everything from cans, especially those condensed mills. The spatulas that have a lil curve, not the one in the video since it’s too flat. I’m a spatula freak 😅

25 minutes in the pressure cooker sounds like a lot for flan. I've tried a few from some people that makes them in those cookers and they taste like sugared hard boiled eggs. I think people don't know what the texture of flan should be. It should be done as soon as the egg starts to gel not when is fully set, otherwise by the time it hardens is really overcooked. That's what the old timers called "en su punto". But nowadays nobody understand this techniques and most flans are really dense and hard. It should be very soft and creamy. Like my grandma used to say when they overcooked it, "they like to kill the ingredients twice over".
Thank you for your input. Cooking with an Instant Pot is different from traditional methods and I try my recipes out numerous times in order to get them right. My flan is not rubbery nor dense. That said, this recipe is for Flan de Queso, not Flan de Leche so the time is different. Hope you find a recipe you like.
It might be the model too … I used to have a Wolfgang Puck pressure cooker and their book had a recipe for flan at 15min and it was perfect. Now when I upgraded to Instapot and started watching these RU-vid video, I was definitely concerned, I decided to cook one at 20min and left until pressure was out by its own and it was definitely overcooked at the bottom. So I’ll definitely be adjusting the time down to 15min.
@@mitty2575 may be, though if they are rated for 15psi they should all work the same. I do mine 11mins and 10 of natural release and it comes at the perfect flan texture.
I have a silicone container which I can use as a "flaneada". My question is will it withstand the heat of the hot sugar? Thank you very much for this recipe, I am anxious to try it.
Hi Nick, that's a great question. I use silicone in my Instant pot a lot but I have never used it for the flan. I am pretty sure it will withstand the heat of the sugar but I don't know if it will cook the same. I would try using a regular metal cake pan. Or just try the silicone mold, maybe you are on to something genius because I bet it's way easier to clean.
I know this is an older video, but I was searching for instant pot flan recipes. I'm thinking about using the silicone egg bite trays to make them into flan bites. Have you ever tried this? I'd love to know if you've done it and if it was successful.
It's the consistency of a very creamy cheesecake with the flavor of flan. I have recipes for traditional flan de lech on my blog, but honestly, I prefer this one way more.

I have kept my flan in the oven for 100 minutes but still it was un cooked in the centre and when I flipped it break!! Usually everyone says it takes 45-50 minutes. I used the same stainless pan. I don’t know what did I do wrong. Please help
That's a great question. Before I got the Instant Pot I made the flan de queso in the oven with a ban marie. The only thing about doing it in the Vortex is flan needs to be cooked in a moist environment and the air fryer is the exact opposite. I also notice the air fryer because it uses moving hot air, it evaporates water quickly which would not be good when trying to make a flan.
