The best instant pot jambalaya. It is easy, so good and quick! Very flavorful!

Instant Pot Jambalaya
(We eat this a lot!!!)
1 large boneless/skinless chicken breast cut into bite size pieces*
1 lb. smoked sausage cut into bite size pieces*
1 Tbsp. olive oil
1 small onion diced
1 bell pepper diced (opt.)
1 tsp. minced garlic
1 can Rotel tomatoes
1-8oz. can tomato sauce
3 cups chicken stock
1 Tbsp. Cajun Seasoning
Salt to taste
1 ½ cups white rice
2 tsp. Worcestershire sauce
1 tsp. hot sauce
Heat Instant Pot on sauté until hot. Add olive oil and let it get hot. Add chicken and sausage to sear the outsides. Remove meat and add onions/peppers/garlic until soft.
Add the meat back into the pot as well as the rest of the ingredients. Stir.
Put lid on and cook on manual (pressure) for 8 minutes. Let pressure release naturally.
*If I have leftover chicken or sausages (like when we grill or whatever) I use those and don’t brown in the pot. It is wonderful.
