Instant Pot Ribs Vs. Oven Ribs! Easy Fall-off-the-bone St. Louis Style Ribs.

We are going to take pre-seasoned Costco ribs and cook them two ways. Instant Pot vs. low & slow in the oven. In the end, we ended with Fall-off-the-bone ribs in both cases with some interesting differences in terms of taste and texture. Let's see the results!
Instant Pot Instructions: Place 1 cup of water in instant pot. Place the trivet in. Put the ribs on the trivet. Put the lid on the instant pot and ensure your vent is closed. Set the timer to 20 mins on Manual. Allow for a full natural release. the whole process from heating up, cooking, and natural release will take about 1hr in total.
Oven Instructions: Pre-heat oven to 275F. place ribs on roasting tray and cover with tinfoil. when oven is ready place it in and then cook for 2hrs.
Finishing Instructions: With either Instant Pot or Oven method, after cooking, place ribs on roasting tray and slather with some barbeque sauce. Place in oven and then broil for about 3-4 minutes. Carefully watch this stage as the ribs can easily burn.
Take it out of the oven, and let rest covered for 3-5 mins. Cut and then Enjoy!
Verdict: We found the oven ribs were more tasty but perhaps slightly less tender than the Instant Pot ribs (although still tender). if you have the time, you can try the oven version based purely on flavour, but the Instant Pot version is still very good and will get the ribs on your plate in half the time and also consuming less energy.

I just bought my instant pot and wondered about the oven baked vs instant pot. Your review was very informative. When I bake the ribs in the oven, I add a little more seasoning (Montreal Steak Seasoning) which gives it a little more kick and the flavor is better. I’ll try this technique in the instant pot to see if the tenderness and flavor both reach a 10. Wish me luck!

@@alwaysbelearning5655 ok, I cooked the ribs in the instant pot with extra seasoning plus a cup of apple juice for 20 minutes (pressure). Then I basted it with bbq sauce and broiled it on high for 4 min as you instructed. It wasn’t as super tender as I expected it to be; my husband said I should pressure cook it a little longer. Here’s what I think. Baking the ribs in the oven covered with foil will taste better bec it’s cooking in its own fat. So maybe I’ll try the 3.5 - 4 hour method @ 275 was it? covered with foil. Experiment and learn.

@@Lbehti Yes, I think a bit longer pressure cooking would help. I think sometimes it depends on the ribs themselves. Some are more tender than others. But if you go longer in the instant pot, it will definitely get more tender.

Great explanation! Just tried both options as well and felt the same on tenderness and taste. We opted to put both the oven cooked and the Instant Pot ribs on the BBQ to add a little more color and flavor. 5 minutes on both sides. Really turned out nice. Thanks for sharing!

Thanks, I followed your instructions for both the Instant Pot and oven. I did them on different days, but they both turned out great. I agree the oven ribs had more flavor to them. I think I will use the oven method in the future.

Very good video. Will try the Instant Pot. Can get the baked ribs more tender at 225°F for 3.5 to 4 hours and they will fall off the bones. Do not stack ribs when baking.

Glad this worked for you Chris! Yeah, the Instant Pot method gets tender ribs on the plate fast. We actually recommend the Instant Pot method more if you are just using regular ribs (not pre-marinated ones) since it will take longer to get tender than 2hrs in the oven. It will like take closer to 3hrs at a lower temp. We will be making a video in the future using regular ribs.

Thanks! I used water for the Instant Pot (about 1 cup). Some people will use liquids like apple juice or other flavourings. I have tried those, but I didn't find that it made a big difference. Great that you are trying both methods too. Let me know how it goes!

So instead of doing the printed Costco 2 hour directions I’d like em a bit more tender. What temperature should I bake them at if I cook them for 3 hours? Also, after removing the foil, do you broil them on low or high setting?

Great question! When people want tender ribs, they are trying to get the ribs the to magical '190-203 F' range. At this temp, the collagen and connective tissue melts and tenderizes. But you don't want to get above that or you will risk drying them out. If you want to do three hours in the oven, I would suggest going fairly low at say 250F. I haven't tried this in the oven, but I have smoked ribs before and I usually keep the smoking at around 250 F and the smoking process does last for about 3-4hrs. Make sure you keep the ribs covered and they shouldn't dry out too much. If you want, you can check after 2.5hrs if you have a instant read thermometer to see what temp the ribs are at that point. Also, keep in mind that Costco St. Louis Style pre-marinated ribs are..well St. Louis cut ribs. That means they are generally fattier than back ribs and can probably standup to a longer cooking time. For broiling, I used the high broil temp. Usually, high broil temp in a oven is about 550F and low broil is 450F. Again, be careful when you broil as the bbq sauce easily burns (speaking from experience!). I hope the ribs turn out delicious for you StreetFighter50!

these look way too greasy to me. if I do oven, I do 225 for about 3.5 to 4 hours, uncovered. They dry out but I like a charred chew.

Have you tried this with the unseasoned ribs? Should I season my regular ribs first as well?

You can used unseasoned ribs with either method, but we do recommend a simple seasoning or rub at least 8hrs before. For the seasoning or rub, it can be as simple as some salt, pepper, garlic powder, and paprika. Feel free to get creative with it! You can also find lots of rub recipes out there. But if you don't have time to do this ahead, you can just add it before cooking. The flavour won't go that deep into the ribs but they will still be very tender. And when you add the BBQ sauce at the end, that will add good flavour at that point as well.

Hi Russell! Sorry, we didn't see this comment earlier! We used water. Some people use liquids like stock, apple cider vinegar etc. However, we have found that it didn't make that much difference.

I got my ribs out of the freezer so I wonder if I need extra time in the instant pot. They will be semi defrosted I guess.

Great question! Never tried that before, but from what I have seen in other recipes, adding 5 minutes to the cooking time should be enough. So set it to 25 minutes of high pressure cooking instead of 20. Let us know how it turns out!
