I moved to the US and do not yet have the idli container. I thought ok I'll make uthappa. Bad idea. Batter stuck to the pan completely! Rava was raw no matter how long I slow steamed it. And coz i kept it for long the whole thing burnt black. So lesson learnt. Jo recipe hai wohi banana. Experiment nahe karna.
Uttappa and Idlis are different dishes. In case you don't have an idli steamer, you can use a pressure cooker... Just don't add the weight, let the steam escape from the top notch part. Hope this helps you make idlis in the US :)
