Man those lion fish are good eats for sure. Sashimi is great sushi great cavechie great. All kinds of recipes work with it. I make it a point when diving where there are lion fish to dedicate an entire dive to thinning them out. Little 4' pole spear with paralizer tip. A custom keeper I made with a plastic 5 gallon water bottle, funnel and a 8" screw down boat hatch and get to work. Last time I was down In keys we got in on a little lion fish spearing tourney. Our boat got 235 in a day I thought we did great until I saw a boat had over 400 and one boat had 600+. Two day totals were over 1000. Was a blast and got lots of fillets!!! I have always wanted to figure out how to preserve some of their skin and use it when I wrap a fishing rod as a base. I will get it figured out one day. Ps there is a product called sting master we carry on boat for aquatic stings and it works awesome on lion fish stings..
@@CookingWithClams ya it was a chore but worth it. Hey I edited my post and let you know there is a product out called Sting Master. It is for aquatic stings. Works on jellyfish; lionfish, fire coral. We always keep some in our dive bags and man it really works. I believe last time I bought it was 24 bucks a container. It is a cream. It's worth every penny. I have cleaned probably a couple thousand and never been stung cleaning them but have taking a few sticks stuffing them into a full bag or container.
Wow just finished watching the video the presentation of that sashimi board at the end looks crazy good. Love yellow jacks one of my favorite fish to catch and cook.

Lionfish is one of my favorites in Asia, but never get the chance to eat it here in the US, I guess I need to make a trip to the inlaws in Florida to go spearfishing! Great video again, it would be great to see a cooking with clams fish fileting masterclass - I can catch 'em, but my knife needs some help!
I move slow. I used to try and filet fast and always messed up the cuts. Finally when I realized I could move at my own speed my filets got better. Also filleting 100s of fish at my restaurant helped
