Years ago I met your Dad (Big fan on his take on Asian food) on a flight I was working. He was so gracious when I asked him to give me a tip on how to pan fry boneless fish without loosing most of it on the pan from sticking but not using too much oil. He said just lightly flour the fillet first :)) Really grateful for the tip then. You both have great chemistry!
Lightly flour and also proper pan heat and proper pan. Take a back end of a spoon and lightly press to keep flat as soon as you fire it. Also that flour helps keep it together if you have a delicate fish.
@@AndreInThe416 what would be confirmed a proper pan for this? Making fish in coming days and I’m taking notes. How hoping do I press, how much oil should be used in your opinion and what oil works best.
This is actually so much more interesting than all the "but better" RU-vid series where people try a dish then start from scratch. It is so much more challenging taking the food as it is and making it better.
@@delorne2776 it's way less challenging is what I'm saying I don't understand how you've got it in your head that it's hard if you can use your nose and understand what's going to go well with whatever you've got in front of you there's a problem.
He may struggle attempting to do an outro, but he knows cooking. It's fascinating to hear his thought process and to see what he contructs from given ingredients. He really is a fantastic food artist. And I love that he's so willing and able to teach what he loves doing in the kitchen.
"Ok Son... I know what to do." That may be the most comforting combination of words that can be spoken, especially from a parent. I know that was spoken of in reference to modifying food, but it shot me back to my childhood when I felt completely safe, supported, and loved. I hope we can all feel of such peace. If you never experienced the peaceful tranquility of loving, supportive parents as a child, I hope you can provide that emotional experience to someone you love one day. I watch these videos for the Father-Son relationship, the food is a bonus!
I have tears in my eyes listening to this man. He loves his son so much. What a generous soul. He is giving his son (and the audience) his entire knowledge and soul. He wants us to be better. Typical Chinese. He wants the next generation to be better than himself. Son needs to hull ass, stop wasting money; only hardworking sweat is worthy of your Dad.
Your Dad gave my girlfriend and I an amazing tour of his restaurant Susur on King St in Toronto when it was fairly new. He was such a gracious host. Was patient with our million questions and of course- had the staff send out something special (and free) for us as a surprise. Unbelievable experience. Thank you Susur.
I came to see an Iron Chef make Panda Express Gourmet and left with a smile on my face after seeing the warmth and love between a father and son. It's something I've always wanted for myself. And yes, I subscribed.

Being calm doesn't mean less serious. My grandpa was a quiet person, he owned a restaurant if any of the employees sent out shit food. All you would hear is plates crashing in the kitchen and people saying I'm sorry..
It's amazing watching anyone with high skill perform, but i wouldn't say it's effortless. They put in an extreme amount of effort in order to be so skilled. :D just how i see it.

I think he's probably passed that but you never know.lol. I mean he helped carry the Food Network for years. I don't even know if the content is still of pure quality like when he was on...watching Food network as a kid is why I'm a fat person now who loves top notch quality food. Love to see the relationship between Dad and son in these videos that creep out and the genuine love between the two. Been a fan of your dad for years watching him compete was a joy and seeing him do what he loves with his son doing his thing is awesome as well. Keep it up!

This was a great vid! Love how well they get along and the easy going joking around to mix it up. That dish looked amazing at the end. I have always enjoyed panda express for what it is. Simply cheaper decent fast chinese food. No high expectations but it's good for what you get and pay. Your dad seems like a great guy. I didn't have a dad growing up but if I did I would hope he was as good a man as your dad. Cherish your dad and your time together.
I work for Panda Express, as a cook, and 100% of the meat we used for entrees are pre-package and are frozen, except for vegetables. Fried entrees such as orange chicken, Beijing beef, sesame chicken breast, honey walnut shrimp, and sweet fire chicken breast do contain sugary sauces; you can also include teriyaki chicken. The rest do not have sugary sauce content, as far as I know. Some of our sauces are pre-package also, but majority of the entrees’ sauces we have to make it. Yes, orange chicken sauce and also teriyaki sauce contains large amount of sugar. As far as the fried rice and chow mein, it depends who makes/cooks it. Chow mein is the hardest to cook and to master. That is why it is a hit or miss type of food since we cook as a batch or masses, unlike regular restaurants in which they cook for individuals. Panda Express has strict rules when it comes to cooking. The Amount and scales of ingredients are strictly enforce. They also enforced proper procedures when cooking. But, apparently, some employees doesn’t respect and follow procedures in which could results with such tasteless food. Thank you.
There's nothing wrong with panda express. Sometimes when I'm in the mood for shopping mall "Chinese food" I'll hit up panda express and never come out disappointed. You know what type of food ur gonna get
Only things I enjoy from PE: Beijing Beef, Orange Chicken, and Chow Mein. I've actually wanted to figure out a copy cat recipe for the Beijing Beef so I can make it for myself at higher quality.

I like how honest his criticism is. I feel like in a lot of these "member of initial culture that invented this cuisine criticizes fast food version," it's them just taking the piss out of the food and being broad. In here he's really being constructive and informative about it.

I've never seen fried rice like that before. The panda express fried rice was what I expected, but your dad saying "this is what I grew up with" amazed me. If I had what he had, I'd be furious about the lack of veggies in pandas fried rice. I can only imagine the flavors.. until I cook it for myself.
@@jasonlewis4602 My dad's a retired chef, but even if you got good food at home, when you're a kid you don't really want to eat home cooked meals and still want to eat out.. Heck, I'm still the same.. I'm kinda addicted to eating out, even if it's not good, just the fact that it's "out" makes me want it.

It is amazing to see what a true master chef does. You look back on everything he did, and it was really all pretty simple, but put together with such precision and purpose. Then turns out looking like a fine dining plate. Awesome.
Found your channel today. Started crying watching you two interact with each other at the end of the video. This is such a special experience you two are able to have with each other. Seeing how happy food makes the both of you is amazing

For those of you wondering about the skillet he fried to noodles in, that's a enamel coated cast iron pan. They are super expensive, but you get what you pay for.
@@Gastroboi I'm so sorry to pry but would you please share the story? I'm imagining you're cradling your enamel coated cast iron pan while walking down the street and it is yanked out of your arms by a stranger and they run away at full speed.
Kinda the name of the game when it comes to cookware in general. usually higher price stuff (if you know what to look for and arent just buying SOLELY based on price) is EXTREMELY high quality and also sometimes very niche...like some utensils or tools used in cooking may only be used in a few things but are also extremely pricey.
Finding this channel has been one of the headlights of 2022 he has always been my favorite iron chef to have the spotlight put on him where he can cook and narrate it's the coolest thing ever
You could practice with a pan, some beans (raw) sit on the floor,lay a blanket, play a show you've already watched and try to flip them. Thank me later
Honestly I just found this channel and couldn't be happier right now, I been a chef for 15years and its always good to see new ways of cooking, good tasting food makes the soul happy
Your dad needs his own cooking channel, he is AMAZING at what he does, thank you for some tips he gave while he tried saving the food, would love to see more and hopefully him having his own cooking channel in the future.
