I'm completely with you about having recipes on paper. If you have it on some piece of electronic devices, it'll keep timing out on you. I prefer old school almost everything. I need to get a notebook and put all of mine in it. Thanks for this one!

Same here!! - But also, on my website, you can select “cook mode” and the recipe won’t time out on you! Kinda cool!

I agree I want my recipes on paper. I find them online and cookbooks and if we try them we put them on blue paper 😊 that’s what we call our blue cloud paper for recipes

I'm used to making my enchiladas with corn shells the traditional way . I don't like the flour tortillas it's like eating a soggy burrito. But everyone's taste buds are different . And it's ok.

I used about 6 to 8 thighs and boil them for about 2 hours and let them cook them shred them up.

If some of you are looking for that carb feel without carbs, try KONJAC noodles or SIRITAKI.Both the same, have a difft taste but i love them. However, shortages have already hit with them so buy while you can at your local asian store. Rinse them and eat. Don't need to heat them up..

Those are more burritos than enchiladas. Enchiladas are made with corn tortillas 😊
