igado is a delicacy from the north, never tried that? that's very tasty similar to menudo but without the tomato sauce. but in that dish, they had put tomato sauce, I think the lady said they are from pampanga. kapampangan loves to use tomato sauce on their dishes. so it's a kapampangan version of that igado. you'll love it for sure!

Food looks great. Igado are usually mostly pork liver, but it's not overwhelming depending on the amount of tomato sauce or paste used. Kurt for a sauce, most people use say sauce and calamansi. I love using fish sauce and calamansi instead. Try it, more on the calamansi side when you make this sauce. I literally put it on almost everything I cook hahaha. I started laughing in the beginning when you are talking and I can hear someone selling Taho in the background. Again, thank you for being so generous to the Philippine people.
