Is This New (old) Kind of Tea For You? Fermented Tea - Thomas DeLauer
I'm always trying to find interesting new things. I'm also on the forefront of a lot of just different research. So I learn about new things that come to light. Now, what I'm going to talk about today in the world of fermented tea isn't anything new, but it's gaining popularity and a level of newness within at least the Western world. And it's something called pu'er tea. Fermented tea. If you've seen my videos before, I'm kind of a tea nerd. So I'm always talking about matcha, I'm talking about green tea, black tea, all this and that. And I know those of you that are watching my channel and watch my videos are probably at least somewhat tea connoisseurs, like you enjoy some matcha tea when you're fasting, but your knowledge of the different teas might not extend past just the various forms of black and various forms of green.
So what pu'er tea is, or fermented tea, is tea that goes through a natural fermentation process. So it's not like kombucha. For example, kombucha is black tea or green tea that's been brewed and then they add a culture to it and they ferment the tea after it's been brewed, usually adding some sugar. Kombucha is a different world.
Now, the benefit from fermented tea comes from the sense that it's already oxidized. People typically think, oh, well a food is oxidized, so it's not going to be good for me. Like you don't want to be eating an oxidized avocado, right? But when it comes to tea, it's a little bit different, because you're oxidizing it and you're getting rid of what would potentially oxidize inside your body. So with tea, because it's oxidized and then dried, you're left with something that's really powerful and the oxidation effect converts what are called catechins over in two specific polyphenols known as theaflavins.
So, tea has these things called catechins. If you've heard of EGCG before, technically that's a catechin because the name is epigallocatechin-3-gallate, right? So, EGCG is a catechin. Now, what happens through the fermentation process is some of these catechins, and a lot of these catechins get converted into very potent polyphenols that normally wouldn't get converted into those polyphenols within your body. So these specific theaflavins that we'll call them, they are really powerful at restoring gut bacteria because they're so prebiotic. So when you're fasting, but in my particular case, preferably when you're doing keto, it helps rebalance the gut bacteria because you can't constantly be eating asparagus all day, but you can sip on tea that provides you with the theaflavins that grow good bacteria.

So you consume regular green tea or black tea, you're not going to get a big gut restorative effect, but with pu'er tea you have a different classification of benefits. So there was a study that was published in the Journal of Infection and Immunity that found that due to the gut shifting effect, the gut bacteria, the gut biome shifting effect, there are some pretty powerful effects reversing metabolic damage.
Found that PE altered the body composition and attenuated metabolic endotoxemia and systemic and multiple-tissue inflammation, and improved the glucose and lipid metabolism disorder in high-fat diet (HFD)-fed mice via multiple pathways
Notably, PE promoted the lipid oxidation and browning of white adipose tissue (WAT) in HFD-fed mice

Then we can add onto this with another study that we found in phytotherapy research that takes a look at hormone sensitive lipase.

Now let's go ahead and move into what it's going to do for your brain. This is a big piece. In addition to remodeling the gut bacteria, which can have a serious effect on what's called the gut brain access, it has a powerful effect on the glutamate scale within our body.
Metabotropic glutamate receptor 5 (mGluR5) is one of the glutamate receptors and represents a promising target for studying neuroprotective agents of potential application in neurodegenerative diseases
In this study, pu’er tea markedly decreased the transcription and translation of mGluR5 compared to those by black and green teas

Hi there Tim! Our teas are whole-leaf teas that are cold brewed for 8 hours, and then dehydrated at a low temperature. So you're essentially getting a loose-leaf grade tea in a crystallized form that is super convenient and super concentrated!

Pu'erh or Pu'er tea is great. Can take a bit to get used to it for some but have been drinking it for years. Found it when I started drinking loose leaf teas over 10 years ago.

I’ve been enjoying the Pique Tea since I started my health journey in February. My question is how many servings per day would you need of the Pu’er Tea to enjoy the amazing benefits. Due to the expense, I am only drinking one serving per day and usually 3 to 4 servings of the Matcha Green Fasting Tea. BTW...I am an avid follower! Never expected you speak on the topic! I've been drinking and ageing the stuff for about 4 years now, have about 30kg of stuff in temperature and humidity controlled boxes in my house to maintain their quality. It's really good stuff, as complex and intriguing in flavour, history and chemistry as fine wines. It's also a big rabbithole of obsession, so beware!

Wow, thanks! Used to use pu-erh, oolong, green jasmine and more but I traded it off for organic, ceremonial matcha. We were bee keepers so I loved with honey, which i dropped, with dismay, for keto. Going to drink them again keto style!

Okay, sold! I contemplated making some tea 2 hrs ago, but had a little leftover coffee I heated up instead. Literally put on a pot of water for green tea while watching this. 😆 (Don't think i have any pu'ehr tea, at least not readily available, & I'm not digging through boxes to look for potential ghosts. But now I'm inspired to dig deeper in my own research on this & keep it in mind next time I'm buying more tea for my massive collection! Lol! Btw, Rishi has very tasty, high quality teas, including puehr. & they're a local company for me, so I like to support them & spread the word. 😉) Water's ready! Gotta go! @@ThomasDeLauerOfficial That would be great. I've been an avid tea drinker for years and have done a lot of research on it. It would be helpful to discuss what we should or shouldn't put in our tea as well. For example, I've read that casein in dairy negatively affects the antioxidants in tea and that lemon is a better additive and can actually enhance the benefits of tea. However, I like milk in my black tea and wondered if the studies about this have been proven. I usually avoid dairy these days anyway and use alternative milks, but I'd like to know for my friends and family who do still use dairy.

I have bee drinking this tea since 2006, i buy it from asian supermarkets, i started drinking it because i read about it's weight loss properties back then and i do think it helped me lose weight then, i was actually quite a fat kid, i kept drinking the tea throughout the years but i'm back to drinking it everyday again for the last few years. It's one of my favourite teas because even if you brew it for 10 minutes it doesn't become bitter and acrid like green tea or oolong tea. I didn't realise it had a high caffeine content but i don't have a caffeine sensitivity or addiction, i can sleep after consuming coffee haha

I used to own a tea business and I sold Pu-er Tea more then 10 years ago, I was the only one in my area. Nobody knew about it and how many healthcares benefits. I put it on the shelf myself for a while. I just pulled out a Pu-er cake from my cabinet, will start drinking it again. Also....This is the only type of tea that gets better with age... the older your pu-er...the better!!

I havent seen this in any of the videos or when I've searched around. Is there a MINIMUM number of carbs you should consume on keto? I've been eating between 15 - 25 but the app I've been using to track them shows the goal as 35.

How is it probiotic if you add boiling water to it. Won't that kill all the good bacteria?

Hi there! Probiotics are a mix of bacteria, fungi, and microorganisms. Some perish in hot water but many don’t. For example, many fungi actually require hot water to be activated. Pu’er tea has been consumed for centuries in hot water to support gut health. With that said, we recommend using water no hotter than 180F

Most mass consumed tea is expensive just because it's convenient... Most people are lazy to learn to brew (which I can understand), let them pay. if they can Others, if they show the slightest curiosity, they will find their way to the usual beginner websites (YS, W2T, CS...) eventually, for sure. If you ever visit Chiang Mai, then come try the real puerh tea experience at Iris Café Nimman (2.30$ to 8$ for a gongfu session with 6/7 grams of tea - that's a liter of tea) Why 8 dollars ? because we have some 20 years old green puerh tea - the best for guts by far

Some our specialty teas (like our Pu'er, Bergamot, Chaga, Reishi, and Sun Goddess Matcha) have twice the amount of tea in a carton than our regular teas, but their higher prices are determined by their higher costs of production: these particular teas are some of our proudest accomplishment teas at Pique and are among the best teas on the market when it comes to quality, purity, and cleanliness. Our hand-selected sourcing, toxin screenings, and dedication to naturally grown products for these inherently rare ingredients all play a role in their price. We understand not all of our teas are for everyone, and the price is a completely understandable reason. We strive to make these teas as affordable as possible, especially since we want everyone to enjoy our teas. I hope this insight might be a helpful explanation as to why they are priced the way they are, which is only because we strive to sell the highest quality, purest, and cleanest teas you can buy. When is best to consume pu er tea to gain the most benefit, Thomas? Pro tip. If you happen to live in a humid area and will travel to China, you can buy Chinese gov certified puer, go back home, then visit China again to sell that tea back to the gov. Depending on how long it's been fermented, you may be able to get 5-6 times of the original tea.

Robert Roberts you can make coffee kombucha with a regular tea kombucha SCOBY. There's recipes & instructions online. I haven't tried that yet myself, I've stuck to black tea for my k-brew, but most sites I've read state that you cannot switch the SCOBY back to tea once it's done a coffee dunk, though I also saw a couple comments from people who said they had no problem alternating. I'm guessing it's more that the SCOBY absorbs flavors, as it's like a giant sponge.

Thanks for the info. I was just curious if fermenting coffee beans before grinding and brewing them was a healthier alternative to traditional brewing methods, and if there were any enhanced benefits.

Pu'er is a whole different world when it comes to tea. It literally pushed me to learn chinese just to be able to dive deeper into the subject. And I'm currently writing my doctorat thesis on tea. I would not advise you to drink teabag pu'er. Or dodgy Chinatown cakes. You can find many trusted online sellers that sell good quality pu'er. (the biggest would be yunnan sourcing but it's far from the only one) Having high quality pu'er (especially shu or ripe) is very important because of the fermentation process, it's easy to get contamination during wetpiling that gives a fishy aroma to the tea, also could have aphlatoxin contamination from poor storage. Generally higher quality tea is pressed into cakes and only the cheapest lowest grade makes it into teabags.

Thank you for putting this out there! Congratulations on a pretty cool path, I would say into tea and I assume TCM. Do you know if it is complicated to make at home? I've made kombucha quite a bit, this sounds maybe a bit more technical, however, as most things ancient, it shouldn't be all that complicated. Hopefully I'm not being offensive with that assumption.

@@monicasantos8233 of course not, it's really as simple as pouring boiled water onto tea leaves. The simple way to do it is to put a few grams into a mug or teapot, rinse the leaves and add water. The more sophisticated way is to brew a more concentrated tea (usually i like to use 5g per 100ml) the first steep is discarded to rinse the leaves and help them open up by rehydrating them ( immediately dump the water) the next steep is the first real steeping, usually 5 to 10 seconds long before transferring the brew into an other vessel, you can usually resteep the leaves 10 to 15 times depending on the tea. You can look for videos of gongfu tea to see it in action. You don't need all the paraphernalia just a mug with a strainer or a small teapot will give a similar brew profile as long as the ratio of tea to water is the same Since you make kombucha this will likely seem trivially simple. I do not really like all the "ceremonial" aspect many westerners like to associate to gongfu tea, i enjoy more the way it's used in china as a technique to elevate the taste of the tea by drinking it with a staged extraction to enjoy all the layers it has to offer.

"a revolutionary way to make tea " (from the video): I'm sure they use some modern techniques that keep a little more stuff than the traditional method. But Chinese can do tea paste, and their stuff, although not a "crystal", will definitively have an effect on your guts too - for a fraction of the price. It's called "Cha Gao" and it has existed... wait for it... for more than 200 years ! "tea from ancient trees" (from the website): that's what Chinese tell all the westerners, but it's BS around 99% of the time. Considering the price of old tree material, I find it strange to sell it to make powder (or crystal) out of it, when you can simply sell it a fortune, as loose leaf, to other Chinese people... Possible, but... (note: I'm sure the Westerner making the crystals actually believes what he says, he's not a liar - I do say his Chinese supplier probably is a liar, because all puerh experts talk about this subject on their blogs - all of them). But hey, whatever makes people try this wonderful type of tea, I'll support If you can pay, try that. If you're poor, do your research - on Google, not RU-vid
