I don't know that it's southern, though. The herbs are southern style, for sure. But the pho itself...it came with garlic in vinegar, which is definitely a northern thing. Dipping the meat into sauce is likely more northern style than southern as northerners don't like to alter the pho broth with sauces and such, whereas southerners will put all the sauces into the pho bowl, stir it up, and slurp it on down.
There's a miscommunication somewhere with special and normal, you said Dac Biet but she didn't hear you, so she said "binh thuong" .....special is 55, normal is 45 ..maybe she didn't want to ripe you off so she assume normal ........special probably has more meat . That bone marrow bowl we have to buy them to eat with rice back in the 80s. That usually sell at the end of the day when they're done selling, nowadays they cook extra so customers can buy them throughout the day. You guys really know Vietnam as you stayed away from the downtown areas, same dish,. same portion, and same quality, but downtown you have to help them pay the expensive rents, so the food in downtown is always double sometime triple the price.

9:07 : The restaurant owner said " moi " ( " I invite you " ) , she meant the beef muscles on bones are free , a bonus . Depending on restaurants meat balls can be added to the " pho " noodles soup .
Dear Ellis, your Vietnamese is surprisingly good haha. Although please don't squeeze the lime into the dipping sauce. The dipping sauce should only have the black soya sauce, the red chilli sauce, the chilli paste. Then into the bowl, the garlic vinegar and squeeze some lime. If the broth is too diluted for you, then you can mix the dipping sauce directly into the broth. Enjoy! I really love how friendly and open-minded both of you are.
Hi Ellis, I think its okay to squeeze the lime into your dipping sauce, I do it all the time when I want my sauce to be more flavorful, some people may don't like it but some do lol
@@tabbieandtheredtown2925 Yeah, he can squeeze it into his dipping sauce if he wants to, but it's traditionally squeezed into the bowl itself, which we didn't see him do (unless he just edited that part out). The garlic should also go into the broth bowl, but I think he put it into his sauce because they told him to...maybe that's how they do it there?
You asked for Đặc Biệt (Special). But then she asked you Bình Thường (Regular), and you said OK. This means you got a Regular one (not Special). Be careful to say OK, make sure to repeat what you really mean. The young lady said squeeze the lime into Pho (not the sauce). Just watch others how they eat, imitate and enjoy.

@@EllisWR Pho is not the only dish to try out. Vietnam is kingdom of noodle. Whenever you see noodle, give it a try. (Chinese origin) Hu Tieu is like Pho, but the broth is made from pork instead of beef (dried and soup options). Cao Lau, and Bu Bo Hue from the middle region. The owner showed you and recommended here Bo Kho (like French Stew origin). Try them all. Bun Rieu (noodle with crap-broth)
Next time you eat Pho, you need to put in the lime, the hot chili, the soya sauce (black) and the veggies in… all mixed with the bowl of Pho… the best…bon appetit!

There's no such thing as " The best". It's all depending on yours and each individual reference. I have eaten Phở around the world and the climate and weather have a lot to do with when you eat it. Also, Phở in the North differs from the South, and I love Phở but can't stand the Northern Phở, but again, it's my personal taste bud. You might like it and think it's the best, but it might not be fore many others. I am also a chef of over 45 years and have tasted at least 100,000 bowls of phở in my lifetime, and yet I have not found the best yet.

Oooo such a hard question, they are both my top tier countries and both good at different things. Both have amazing locals and some of worlds best food.
I'm not sure that's necessarily southern pho. I think there are elements of southern-style in it with the pile of herbs. However, whenever I see pickled garlic and/or peppers, I think northern right away. Also northern style may be served with quay (fried bread stick) or the raw egg with hot pho broth poured over it. The way they showed you to make a dipping sauce for your meat vs having you toss it in the bowl also tells me it leans northern style as southerners will oft times just dump all the sauces/condiments in their bowls, stir, and eat. Northerners don't like their broth drastically altered as the broth is the soul of pho. BTW, when Viets make pho at home, we LOVE the large bones with bits of meat and fat on them to gnaw on. It's the best part of eating pho to me. 😁

Pho 2000 is good enough. Don’t need to go around searching for very good pho. It’s standard fare and that spring onion appetiser dip into salt pepper and squeeze of lime is a good palate cleanser. As long as they don’t do weird combinations like truffle.
Why would the fatty bone be dubious? Pho broth is made from cooking the hell out of those bones. They usually cost extra but the aunty gave them away for free.
In England we don’t get fatty bones served in restaurants or eating establishments so it’s strange looking. We use carcasses to make stock & slow cook a lot of various cuts on the bone too. But like I said bet it was tasty
I love it when a foreigner go to a pho place and think it the the best pho in Vietnam. It like us going to Mc Donald and say they have the best burger in America.

@@EllisWR beat pho in Saigon. Pho Vietnam district 1 across from New World Hotel. Pho Anh district 3 on Kỳ Đồng Street. You might want to try them out and see. But it just my opinion. But you can go to landmark 81 to try the 3 million dong pho. I heard that the best in the world not just Vietnam lol.
