This was one of the first recipes I made when arriving on island. After being stationed on Guam for 3 years, we have transferred, but I still make this regularly! If you can't get pumpkin tips, spinach or fresh green beans work well too! Thanks for producing these. Would be even more helpful with the recipe in the description as I haven't found this recipe anywhere else online!!
I had coconut shrimp at a Thai restaurant once, years ago, and I honestly think about it all the time...I can't wait to go home and make this now!!! Thank You!!! Semper Fi!!
OMG. I use to live in Mangilao when I was in UOG. I worked at restaurant in Ladera Towers (don't know if it's still there) back in the late 90's - early 2000. Guam is awesome.
We dont put alot of water in the coconut. We just put little and we squeeze the natural juice out of the shredded coconuts. Otherwise the juice is watery and not milky.
This was really sweet, thanks for sharing your family and the way they cook. I'll try it tonight. Best to you all. (wish I could get coconut in my yard - but there is just snow. :) )
The background music is too loud and very annoying. That, and the David-guy seems kinda rude... talking to his family like they're his subordinates. The dish looks great though.
