A recipe for a very tasty appetizer of eggplants and peppers in the oven. This salad is made very, very quickly and simply. Spicy eggplant appetizer in sweet and sour sauce!

🔹Ingredients🔹
✔Eggplants - 800 g.
✔Sweet pepper - 700 g.
Marinade:
✔Odorless vegetable oil - 50 ml.
✔Water - 200 ml.
✔Garlic - 2-3 cloves.
✔Balsamic vinegar - 1 tbsp. l. (not necessary)
✔Lemon juice -2 tbsp. l.
✔Sugar - 1 tsp.
✔Black pepper - 1/3 tsp.
✔Salt - to taste.
✔Greens - any, to taste (I have dill, cilantro, parsley).
✔More love and good mood (required)
🕒 Bake vegetables at t 180°C for an average of 35-40 minutes. The exact baking time depends on the features of your oven.
❗Notes ❗
✅It is not necessary to observe the exact proportions of vegetables here; you can take more/less peppers or eggplants.
✅If you wish, you can also take Dungan (low-hot) pepper. I also sometimes add zucchini. I bake them the same way as eggplants.
✅When baking eggplants, it’s better to pour a little oil on them. I baked them without oil - they turned out a little dry.
✅Eggplants can be baked whole, then cut or disassembled into fibers.
✅Immediately after baking, I cover the vegetables with foil and let them stand and cool. This way, they will become even softer and will be much easier to clean.
✅ Instead of balsamic vinegar and lemon juice, you can add regular table vinegar 6% to the marinade. You can also replace balsamic vinegar with soy sauce.
✅If desired, you can add other spices to the marinade. But since fresh pepper and herbs are very fragrant, I don’t add anything else except ground black pepper.
✅The snack can be put in the refrigerator overnight, so it will marinate even better.
