I made it tonight after your version, I used 6 tsp olive oil for 4 portions, put pasta water in after 5 min, put the pasta in 2 min before they were done with more pastawater. Let it cook for 2 more minutes, added the parsley last minute, no cheese, perfect , creamy, but not a little bit oily- just not enough salt in the pasta water, needed a lit bit of salt on the plate.

I was so excited when you said Food Wishes! Chef John is one of my favourites too. Any recipe of his I've followed has been fantastic. I'm going to let him off this half hearted attempt at a lopsided pasta because you can hear he isn't feeling well in this video. And now Vincenzo has joined him on my list of favourites.👌 I am thinking about roasting the garlic for this and trying it that way. Gonna make it for lunch tomorrow. 😋

Filipino Sweet Spaghetti is called as it is and not called Pasta with small meatballs or Bolognese, an actually good example which can shock most pasta enthusiasts but not be offensive by calling it something Italian.

I remember ordering this dish in a restaurant in Buenos Aires. The waiter said "You don't want that. It's just oil and garlic" as if I was insulting the chef. I ordered it anyway and it was wonderful! (BTW no cheese.)

I would never order that in a restaurant unless maybe if the restaurant is using some rare high quality pasta and extra high quality parsley and garlic that you can’t get at home.

I've to admit that once it's ready I like then to stir fry the pasta aglio e olio with a generous amount of grated Parmiggiano Reggiano (I'm a cheese lover) that melts nicely. 🙈

In Roma we call it Spaghetti ajo e ojo (where j is the the long and strengthened 'eee') and normally we always do ajo ojo e peperoncino, adding red chili, and in this case is forbidden according to everyone I know of to add any cheese.

I once saw this recipe of "Oil Free Aglio e Olio" and I don't even bother watching hahaha. As a vegan Aglio e Olio is my favourite pasta recipe! It's easy, quick and just so delicious. I always feel sad whenever a cafe/restaurant spoiled it! Like there was once I ate in a cafe here in Indonesia, ordered Aglio e Olio and it comes as a... Tomato based pasta. Why...

I don't know an Italian person in real life so I've been learning from Vincenzo and Ava. Now, I'm a snob lol! If I order carbonara and they bring me anything with cream or peas I'll be upset! And don't get me started on people making pasta in an instant pot! It's a sin!

Hey foodies, today I found bronze die cut pasta imported from Italy at Aldi of all places. I bought the chitarra kind and will report back after I make some. It looks fantastic and was only $1.59 for a pound. They also had linguini and fettuccini.

Grazie Vincenzo! When I was in grade school (long time ago), I had an Italian penpal from Italy (San Severino Marche). We still keep in touch now and then! Anyway, my mother (who is not Italian) made the best dish and I would like to share it with you! It is oven roasted chicken thighs with olive oil, garlic and hot pepper flakes. Roast that together, then add chopped spinach (frozen works very well), linguine and lots of grated cheese. Molto bene! Thanks for your video and cheers from your Canadian fan!

12:29. Qui io non direi tanto ok, perché sembra come se avesse fatto una pasta al ragù e poi mette il ragù sugli spaghetti. L’ideale sarebbe stato alcuni minuti prima della fine della cottura, mettere gli spaghetti nella padella insieme all’olio e l’aglio, aggiungendo dell’acqua di cottura, portando così a termine la loro cottura, creando così un’emulsione ed anche un piatto più cremoso.

I have to say I agree with Vincenzo 100% about the lack of added oil in these videos, the star of this recipe is the garlic and oil. A little bit of cheese is ok but not so much that it overpowers the other ingredients 🙄

Bravo Vincenzo, excellent recipe video. You're able to critic mistakes with elegance and modesty. If I could add a small suggestment: I add two tablespoons toasted breadcrumbs two seconds before serving, gives a light crunchiness to your spaghetto

YES CHEF THATS TRUE AOP NEEDS LOTS OF EXTRA VIRGIN OLIVE OIL. MY FAVOURITE PASTA OF ALL TIME.. AOP PASTA GIVES THE PERFECT TASTE IN GARLIC CHILLI EXTRA VIRGIN OLIVE OIL.

I am determined to follow the traditional way, but was just watching Babbish’s video of the dish and he did everything right, but then added lemon. What are your thoughts on this? Is there a dish similar to Speghetti Aglio e Olio that uses lemon?

apparently it is a recipe from a movie called, "Chef" that he is following, so perhaps it is the movie that gets it wrong.

Hey there! 😊 I totally agree with you, the traditional way is the way to go! As for the lemon, it's not typically used in Spaghetti Aglio e Olio, but there are some dishes that use lemon like Pasta al Limone. Give it a try and let me know how it goes!

Question, why do they constantly feel they need to say you shouldn't rinse the pasta with cold water?! Who the heck even does that?! Who even thinks about doing that?! Only time I do that is if I make a pasta salad and need to cool the pasta quickly, but I just can't understand rinsing pasta with cold water in a normal hot pasta dish, it makes zero sense!

I sometimes do, but I'm doing this for the people who needs to know that there are far better options and recipes for them to try. I want to teach and help them understand that there are the good recipes at the same time the bad ones. I hope I was able to rely this message to you.

When garlic is browned it's not burned. If cooked in a lot of oil slowly, it's confit, which is different than sauteed. And the allicin is gone, replaced by sweet, savory, and mildly caramelized. If browned in a sauteed way, then you can get different elements of caramelization which CAN add a bitterness if gone too far, and it gives it a different texture, that I would describe as sticky and chewy. In either case, you make too much of the "bad breath" quality. You always speak as if garlic cooked in any manner has the same bad breath characteristics. Americans do sometimes use too much garlic, but many of us also have a more scientific understanding than old world cooks stuck in myth and legend, and we use a greater diversity of cooking methods utilizing this knowledge.
