This is a raw jackfruit and is very hard and it is very difficult to cut it because not only it's hard but also sticky white milk comes out of it. North Indians use it in many diff way. This cutting style is basically for Kathal ( jackfruit) kabab or kebab very famous in Lunknow The city of Nawabs. Otherwise we cut it in one to two inch cubes to make curry, biryani, pickles etc When it's ripe it is used as fruit. It is yellow color juicy and sweet fruit and it comes out very easily because it becomes very soft when it is ripe.

Para quem está se perguntando "O que ele está fazendo com a jaca?" esta é uma resposta simples. É "carne" de jaca para se colocar no curry. Uma parte dos indianos são VEGETARIANOS, então eles procuram respostas alternativas para "imitar" a carne, e essa é apenas uma dessas, ele não está estragando a jaca ou algo do tipo, apenas aplicando uma receita culinária local. :)
@Philip Sandercock You don't need to use paper. Steps for ripe jackfruit- 1. Cut the upper side. 2. Peel off the skin. 3. And then pick pieces one by one. You might have some glue stuck in your hand. Don't worry. Just use coconut oil on your hands. Keep it for 1 min and then wash with soap. Glue gone! 4. For unripe jackfruit, you can follow the same tactics. The curry with chicken and jackfruit is just awesome.
Hey Jubayer Ahmed. Thanks for the national fruit info. I googled Bangladeshi YOUNG(not ripe) jackfruit recipe. Tons of them. You probably mean not finely chop this way? When you said "never" it made me curious.
They are not wasting it, they will make its kabab. It's very mouthwatering dish. It tastes really good with chutney. We need some minced jackfruit,some flour, salt, spices etc mix all then make a patty and shallow fry or deep fry it. You can see some recipes on RU-vid of jackfruit kabab or Kathal kabab ( Kathal is the name for jackfruit)
This cut jackfruit is used for curry which is very much sought after and in great demand. It’s a delicacy made in marriages and on special occasions. We don’t get the cut raw jackfruit everywhere and all the time. Então o caroço da jaca verdadeira pode ser cozido, fica parecendo com castanha portuguesa. Mas essa do vídeo é uma fruta-pão, parecida com palmito, se come cozida, por isso ele pica toda.
