If you're good at making structured jackets you could make a killing developing a modern jacket that holds up with the weight of a fly plaid off one shoulder. Victorian era jackets wouldn't shift or bunch up too much with a bit of wool hanging on your back. But most jackets today are too soft and flimsy. It's to the point now that some kilt sellers advise against wearing part of the traditional outfit because they have no knowledge or experience with proper structured jackets. If you got up with the kilt makers and sellers, presenting a jacket specifically made to be paired with a kilt and fly plaid for the groom who wants to wear the full outfit, or whose bride wants him in the full outfit. Then you'd reach a pretty hungry market.

ditto. the difference is still not clear to me. so can we have structured but unlined or unstructured but lined?

Both combination are possible. I.e. full canvas and unlined; unstructured and lined. They are independent of each other, and serve different purpose. Canvas is primarily to give structure to the garment, while lining is primarily to make the garment more wearable and longer lasting.
