INGREDIENTS
1 pound cherries, fresh or frozen, about 35 to 40 large cherries
¾ cup white wine
½ cup cherry preserves
½ teaspoon vanilla extract
1½ teaspoons potato starch
For serving:
Sour cream
Mint sprigs

For sour cherries, the paperclip is the best method. They're so fragile, a cherry pitter will mangle them. And I don't unfold the paperclip -- the extra loop helps catch the pit.

Sir, you are the finest chef that I have seen. I learned to cook 25 years ago, when you were on PBS. You have taught me so much, but the most important thing you taught me is technique. Without it, I was burning water. (I am only exaggerating slightly,)

Of all the celebrity chefs, the one whose food I would most want to eat is Jacques'. I am not a big dessert person but damn, this is just amazing! These videos cannot compete with anything on the Game Show...er, Food Network.

He is using what he can find in his area. He is not fussy and pretentious, he buys the same products as other people, just like his mom did at the market for her restaurant. Remember that he used to be a chef at some of the best restaurants in France, and then the chef of three french presidents. He knows how to do fancy dining. But he can also do simple dishes with simple ingredients.

You might serve this with crème fraîche. But crème fraîche can be difficult to find in the U.S., and sour cream is often used as a substitute, since it lends creamy richness with a bit of tang. Thanks for watching!

It almost reminds me of the combination of fruit and cream cheese, the sour cream is just more tart. I imagine full-fat sour cream is probably important as well.
