Jain Millets Patty
Ingredients:
For the Patty:
1/2 cup Barnyard millets
250 grams Raw banana
1 cup Zucchini, grated
1/4 cup Roasted peanuts, half crushed
2 tsp Green chili paste
1 tsp Salt (or to taste)
1 tsp Red chili powder
1 tsp Aamchur (Mango) powder
1/4 tsp Turmeric powder
A handful of Coriander leaves, chopped
Oil, for shallow frying
For Coating:
1/2 cup Corn flakes, crushed
1/4 cup Bread crumbs
For the Salad:
1/2 cup Curd (homemade)
1/4 tsp Salt
1/2 tsp Black pepper powder
1/2 tsp Red chili flakes
1 cup mixed julienned vegetables (Red cabbage, Green capsicum, Yellow and Red bell peppers)
2 tbsp Coriander leaves, chopped
Method:
Prepare the Patty:
Pressure cook the raw banana until soft (about 3 whistles). Remove the skin and grate.
Wash the barnyard millets and pressure cook with 1 cup water, salt, and turmeric powder for 3 whistles. Let it cool.
In a large mixing bowl, combine grated raw banana, cooked millets, grated zucchini, crushed peanuts, green chili paste, chopped coriander leaves, salt, red chili powder, and aamchur powder. Mix well to form a dough.
Shape the mixture into round patties.
Crush corn flakes and mix with bread crumbs. Coat each patty in this mixture.
Shallow Fry:
Heat oil in a tava (griddle) on medium heat.
Shallow fry the patties until they are crisp and golden brown on both sides.
Prepare the Salad:
In a bowl, whisk curd until smooth. Add salt, black pepper powder, and red chili flakes. Mix well.
Add the julienned vegetables (red cabbage, green capsicum, yellow and red bell peppers) and chopped coriander leaves to the curd mixture. Toss well to coat the vegetables evenly.
Serve:
Serve the hot Jain Millets Patty with green chutney and the prepared salad.
