Hi, this is known in the Virgin Islands and other parts of the Caribbean islands as fungi. Your style of cooking it is total different. We don’t soak the corn, we pour the cornmeal in the boiling water and turn it vigorously so there’s no lumps. We add water accordingly and let it boil. After the corn is fully cook until it no longer looks grainy cooked okra is added.

In Italy 🇮🇹, this tun cornmeal is called Polenta. It is cooked with water, a broth or stock of choice and served much the same way. Grated cheese is usually atted - the classic is Parmigiano. It is something molded then cut and fried in butter - just like frying leftover dumplings for breakfast.
Chefs always take poor people's food and charge expensive prices for it🤣. When I first saw polenta at the groceries, I was very surprised. I was like isn't that tun corn meal??🤔 I remember when chicken wings were called poor people's food, now they're pricey.
