This was SOO funny and amusing to watch. You really see how their personalities crept into their individual takes on jerk chicken. I’m not Jamaican but I’ve eaten many different versions of jerk chicken to have an opinion and love it done properly. I agree with the sentiments that jerk should always be grilled over hardwood charcoal and that it should be a bit on the dry side with crisp, somewhat blackened edges here and there for texture and flavour. Smokiness is key but so is the balance of flavours, spices, saltiness and sweetness. It should NOT be overly salty as that can take away from the other flavours, including the chicken itself which does NOT need to fall off the bone, as it is not a braised chicken. Even though the Caribbean chick made hers too wet I think she’s right about making sure it has decent heat and kick. 🌶️ 🍗 🔥They need to film this in Jamaica 🇯🇲 and find out how the real grillmasters make theirs using freshly grown ingredients.

My sons father is Jamaican so when he told me he would teach me how to make jerk chicken I was excited. I thought his great grandma gave him the recipe. The most important components of jerk chicken is scotch bonnet peppers and allspice as main seasonings (preferably marinaded over night) and smoking the meat over pimento wood. Cook it low and slow.
