I have never had gravy before, maybe its not normal here in Norway, but gravy really rocks . Takes it to an whole other level...Thank you again and happy new year. And sorry for my bad english... cheers Tony

Jamie, if you ever read this: I’m 54 yo and you’ve been one of my heroes for a long time. Also this year you were part of our Christmas dinner. Thanks for everything you’ve done so far. Merry Christmas and all the best wishes for you and your loved ones for the New Year. Festive Greetings from the Netherlands 🇳🇱

Made it yesterday and my turkey turned out to be fantastically moist and full of flavour! Thank you Jamie :) I added some garlic to onions and vegetables and it worked really well.

Delicious Jamie - time to tuck in! For years I have also been roasting my bird upside down. Keeps the breast meat remarkably moist. All that's needed is a deeper trivet base of veggies; easy-peasy. Works every time.

On christmas day mum makes the turkey for 11am and we eat at 1:15pm so the idea of resting it must have been around for years. It is never cold even after two hours!

I cooked a turkey for the first time 2 years ago using your method, along with a brine/marinade. My wife said this is the first turkey she ever liked!! So I’m doing another one right now, just for the fun of it, I hope it turns out just as good.

Can't tell you how many people I've taught to roast a turkey. It's the easiest meal to feed a crowd. I actually do this thing though where I mix olive oil, spices, lemon juice together and pulverize it into a pesto and rub that underneath the skin (between the skin and the meat) so it has more staying power. I place herbs in the cavity too. I include lavender generally...because I like it. Also, I roast at 500 for about 15 minutes at the outset and then turn the temp down. Will try your version though!

Big bad Jamie, You have to get stuck into the bush oven for roasting on the open fire or heat beads. It is amazing. The meat just falls off the bone and the flavours permeate not only the meat but the nostrils of the invites. Great when you have family or friends over. A few beers or wine while the meat is cooking on an open fire outside, it is heaven on earth. Check out the Hilly Billy oven made in OZ for the best of the best camp ovens (no I don't work for them). Always love your work got your apps/books etc. Long live the English way of life.

Have you ever seen a wild turkey in its natural habitat in New England to the Carolinas? They're really aggressive and terrifying! But they do taste turkier if tougher as they actually fly and forage pecans, hickory nuts and crabapples. I prefer that my turkey live a little and fully experience being a turkey! I used a Calvados and butter basting liquid with the wild turkey and it was the best, ever! Apples. What can't they do?

+experte003 Resting the turkey allows the juices to redistribute, and the foil and tea towel should help to keep the heat in.

Great looking turkey JO! I like to foil mine too! This year I tore the skin off (after it rested) seasoned it, and fried it in coconut oil. It was gone before we sat down for dinner! Better than bacon.:) I'll post a pic on my G+. :)

@@59771006 * Gee Doug, don't put words in my mouth, OK? I never mention Oliver by NAME, but all of his fans are convinced that using tin foil on a turkey, is the correct way, just because HE says so!
